Eileen's Spicy Gingerbread Men
This is the best gingerbread recipe I have ever tasted!!! It is wonderful> The cookies are soft and have great flavor. I don't like ginger too much so I did change the recipe so that there was only 1/2 teaspoon of ginger and 1 whole teaspoon of cinnamin. You can still taste the ginger but it is a little more subtle.

Chicken Strawberry Spinach Salad with Ginger-Lime Dressing
Very good especially if you like citrus. Could use a few more ingredients.
