Beefy Cheese Dip

Reviewed: Jul. 5, 2007
This is such an easy recipe!! It was a family favorite. I served it with a dollop of sour cream and Frito Scoops! My niece LOVED it she had 2 or 3 bowls. It's best served warm so I suggest cooking it in a slow cooker and keeping it on low as you serve it or even just putting it in a slow cooker to just keep warm.

Gina's Lemon Pepper Chicken

Reviewed: May 31, 2007
I absolutely LOVED this recipe! I didn't follow the recipe as directed though. I did follow fellow reviews and browned my chicken first, then I baked it for about 25 minutes. I used lemon pepper, garlic powder, and a tad bit of garlic salt. I also squeezed some fresh lemon juice on my chicken when I was browning it. This was such a flavorful recipe! I served it over pesto pasta. DELICIOUS!

Flourless Peanut Butter Cookies

Reviewed: May 25, 2007
I've got to admit, at first I was skeptical about this recipe being flourless but I decided to try it anyways. This was such a simple and fast recipe! It is so very good and chewy. I did follow some of the advice given in the comments, and I added a splash of vanilla extract. This is definately a cookie I will be making in the near future =)

Lime Garlic Chicken

Reviewed: May 24, 2007
This was such an easy recipe!! It was so easy my 3 year old even helped me make it. She helped shake the chicken in the bag. The lime juice really tops it off. It just needed a little more seasoning, but other than that it was great! Next time I make it I'll season it with seasoning salt, garlic powder, and lemon pepper.

Brown Sugar Meatloaf

Reviewed: May 18, 2007
This was the second meatloaf recipe I tried. It was good. I read some of the reviews and took some comments into consideration. Like others I thought that it called for a bit too much milk and it came out a little too mushy. I also put the brown sugar and ketchup on the top instead of the bottom. It was a good recipe. I will definately try this one again but alter the ingredients a bit. It was very simple!

Peanut Butter Cup Cookies

Reviewed: May 14, 2007
By far THE BEST cookie!!! If you like peanut butter, if you like chocolate, if you just like sweets period this cookie is for you!! The dough is just soo chewy and perfect and the peanut butter cup just tops it off!! I did however have to bake the cookie 10 minutes and not 8. I also didn't have a mini muffin pan and I forgot to buy the mini cupcake paper so I just had to use my baking sheet! Still came out great! This is one I will DEFINATELY be making over and over again!

Chicken Cordon Bleu I

Reviewed: Feb. 20, 2007
This is a very easy recipe. I added some cayanne pepper to the seasoning of the chicken and I made a cream sauce (simmer cream of mushroom, sour cream, milk, and a pinch of salt and pepper)to top it off. If you don't pound the chicken thin enough it will be hard to roll. My husband did think that there was too much cheese. I think that the cheese inside the chicken is enough. But other than that it is just delicious!

Honey-Pecan Chicken Breasts

Reviewed: Feb. 14, 2007
This is a great recipe. It's fast, easy, and all the ingredients is already in your pantry! I Love it! I made it for Valentines Dinner. My three year old just ate it up. My husband isn't too big on sweets but he did help himself to seconds. I thought it would be too sweet with the honey but all the ingredients complemented each other so well. I did have to cook the chicken a little bit longer then directed and I also incorporated the pan drippings with the honey and pecans. It did stick to chicken just beautifully after I plated it. Overall, a BIG HIT!

My Kid's Favorite Pork Chops

Reviewed: Jan. 27, 2007
This was such a delicious and flavorful meal. My husband and daughter ate it up. At first I was skeptical about making it with beer on low heat but decided to give it a try. After reading all the good and bad reviews on here I did switch some things up. Instead of using steak seasoning I used Garlic Salt, Garlic Powder, Black Pepper, and Santa Maria Seasoning (I'm not sure if every store has it. But it's easy to find in California). I put a bit of EVOO (Extra Virgin Olive Oil) in the pan and browned the chops. I used 2/3 cup of Heineken Beer (I read someone else used it as well so I thought I'd give it a try. But my husband is a Bud Light drinker so next time I'm going to try that.), 2/3 cup of Hickory Smoked BBQ, about 1/4 cup of A1 Steak Sauce, about 2 to 3 dashes of Worcestershire's Sauce, and about 1/2 cup of brown sugar (I actually just used two handfuls, I don't really measure I eyeball a lot). I cut up some Vidalia onions and put it on top of the chops in the sauce and I just simmered on Low Heat for 2 hours. It came out perfect! Meat came right off the bones. I served it with white rice. It went great together! By the way I only cooked with 4 chops so that's why I had to reduce the quantity of ingredients.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Jan. 27, 2007
These cookies were very easy to make. They were a little crunchier than I expected them to be, but they were still very tasty! My husband isn't much of a chocolate person so I added 1/2 cup of chopped pecans. I also put the dough in the refrigerator for about an hour so that when I bake it the cookies won't spread all over when it's cooking. I didn't bake all the cookies at once. There's only three in my family and that would've been way too many. So what I did was I rolled them into individual balls and lined them up in a line on saran wrap and rolled it up. (I posted some pictures) I put 9 cookie balls in a roll. I put the rolls in a freezer safe ziplock back and put them in the freezer for use in the future! Will definately try this recipe again.

Bacon Wrapped Smokies

Reviewed: Jan. 24, 2007
This is the easiest recipe ever! It came out soo delicious even my 3 year old loved them! She wouldn't stop eating it. I read some of the reviews before I made it. I put the brown sugar and little sausages in a gallon sized zip lock bag, then shook it. I also used maple flavored bacon instead of the regular (let me tell you it brings more to the recipe! A definate must try!). Instead of using foil I put a cooling rack on the baking tray and sprayed it with non stick cooking spray so that the bacon won't stick to it and placed them on there, and I lined the tray with foil for easy clean up. It came out nice and crisp all over when it was done. I baked it at 400Deg. F for 40-45 minutes and they came out nice and crisp. With Super Bowl Sunday coming up this will be the perfect bite sized snack for the fellas!

Mom's Meat Loaf

Reviewed: Dec. 21, 2006
This was a very good and simple recipe. My husband loved it. Although he thought the glaze was a bit too sweet. I thought that it called for a little bit more milk than needed. It came out a little soggy in the 4 serving recipe, so next time I'll use less milk. But all in all it was a great success!
