Elegant Artichokes
Great version of artichokes! I usually eat warm and dip in garlic or lemon butter, but this change was welcome and wonderful. I left the green peppers and green onions out of the dipping sauce as the flavors didn't jive for my family, but all in all, a great way to serve and eat artichokes! Suggestion: cook the artichokes for close to an hour to make them more tender.

Tomato Basil Soup I
Great tomato soup recipe. The spices give it that "grown-up" flavor missing from the old standard can. I used a hand smoothie blender to puree the tomatoes at the end of cooking to give it a thicker, heartier quality. It was great!

Balsamic Roasted Red Potatoes
Awesome potatoes! I am a huge balsamic lover and am always looking for great recipes to highlight it. These potatoes do that beautifully. I paired with a rack of lamb which was superb. Hint on getting dinner done with only one oven: when I pulled the potatoes out to add the vinegar, I popped my meat in the oven. I put in the vinegar and covered with foil while the meat cooked, then finished in the oven while my meat rested. They turned out beautifully!
