Sunshine Toast
My hubby and I always fight over whether these are called "Tiger Eyes" or "One Eyed Jacks". They are most def Tiger Eyes...but they're good even when he mistakingly calls them One Eyed Jacks too.

Buttery Cooked Carrots
A great way to serve carrots with a slightly sweet dish. Go great with porkchops with a sweeter topping (brown sugar or cranberries).

Vegan Apple Carrot Muffins
These turned out great. I have been needing some fast breakfast food in the morning and these work great. I used 3 bananas in place of the egg replacer and added raisins....they are great with pb:)
