About this Cook
A Christian mother of four, all about God & family & loving the life we're given! (WAY far from perfect, but forgiven, blessed, and trying to be a better person each day.)
My favorite things to cook
Anything that can be labeled "Comfort Food". I like making hearty stews, creamy casseroles, meat-n-potato dishes that fill up hungry kiddos. I like the challenge of finding ways to make these dishes healthier, too.
My favorite family cooking traditions
Meals in my family, growing up, were a vehicle for conversation, training, bonding, etc. After a hearty meal, my dad would push back from the table, settle back in his chair and read a chapter of a book to us. It's one of my favorite memories. I try to use mealtime the same way with my family, today, though it's a struggle to get everybody to the table for any length of time.
My cooking triumphs
My own recipe for Sausage Chowder (I keep improving on it, but I need to write it down next time I make it so I can submit it to AllRecipes!) It was originally my parents' recipe for salmon bisque, but I adapted it into something my kiddos would like and it's always been a big hit with everybody who's tried it.
My cooking tragedies
Not every dish can be a winner; when things go badly, I just chalk it up to experience and realize I'm a better cook for having learned that lesson.

Baked Ziti II
Delicious and easy. I browned 2 lbs. ground meat with diced onion, bell pepper, salt & pepper and Italian spices, a bit of water and simmered until the water evaporated and meat was tender. Then I poured two 28 oz. cans of sauce over the meat and let that simmer while I prepared the rest of the recipe as stated. It was delicious, and I had lots of extra sauce to serve on the side. The recipe was moist enough without the extra sauce on the side, but extra sauce is always delicious, and made the leftovers more appealing.

Fresh Broccoli Salad
This is a very good recipe for the tried-and-true broccoli salad. I substituted green onion for red, dried cranberries for raisins, and almost doubled the bacon. It was delicious!
