Hi my name is Amanda, I'm a vegetarian, and I cook meat. Emphasis on the word "cook" - I don't actually taste/try/eat meat. I just cook it.Before you start asking "what is the big deal?" I'd like you to imagine what it would be like to cook anything and not be able to try it first. Need a… MORE

From The Blog:  How a Vegetarian Cooks Meat
About this Cook
I'm currently a PhD student, studying environmental science. When my head is not in a book, one of my favorite hobbies is cooking! I find it such an exciting adventure, and love those "weird" recipes!! I was recently married in July of 2009. I met my husband, Justin, while we were both volunteering at a nursing home here in the DFW area. Currently, we are planning to move to San Francisco.. (so excited about the possibilities!)
My favorite things to cook
Salads (don't laugh!), pastas, breads, quiche, plantains, and soups.
My favorite family cooking traditions
My mom cooked everyday during my childhood. She probably had more of the "Rachel Ray" style of cooking. My dad is more of a southerner, so we had allot of traditional foods in American cuisine (meatloaf, chicken, stews, etc...).
My cooking triumphs
(see favorite things to cook.. lol)
My cooking tragedies
Ugh. Too many to name. I'm seriously the poster child for "if you don't succeed...." Rice is just the worst!! so are my tortillas, it's so pathetic! Also, MEAT! I'm a vegetarian (since I was 12), so I literally am learning "from scratch" how to cook meat - without ever tasting it. It's a whole new experience to cook meat with only my sense of smell, sight, and touch (with a gloved hand).

Golden Baked Chicken
Husband liked this - I used a cheddar flavored instant potato mix. He liked that cheese flavor. Has requested to make it again. Only negative is that the edges of the chicken was a little tough - so I guess next time I'll reduce the cooking time by 5 minutes.

Zesty Slow Cooker Chicken Barbecue
Really great, husband loved it - served on french bread, sprinkled with cheddar. I used the Jack Daniels honey bbq sauce.. I think it's a quality product, but if you use a "honey" or "sweet" bbq sauce, you probably should cut back on the brown sugar (maybe half or none at all) that the recipe itself calls for. Will definitely make again with that only change.

Herbed Greek Roasted Potatoes with Feta Cheese
Holy Cazoly, these were fabulous! Followed the recipe exactly (with the exception of mint - which I forgot at the grocery store). The subtle lemon and garlic flavors are so beautiful... next time I might add a dash more of both! Also, the recipe does not say this, but I stirred it at the half-way point.. I think it was a good idea. Yum!
