Blueberry French Toast

I have made the original and it was very good - however, if you want EASY and AWESOME, read on. First of all, you can make this the morning you serve it - it does not need to be made the night before. I let it sit on my counter 20 or so minutes before baking to let it soak in. Only 8 eggs are needed, mix in 1 tsp. vanilla and 1 tsp. cinnamon in the egg mix. I also use 1-2 cups of blueberries sprinkled with 1/3 cup sugar in the center and omit the sauce entirely. Serve drizzled with maple syrup and it makes this breakfast even quicker. What makes this French toast perfect is using challah bread!

Pineapple Mojo Cake

Great cake - I am not usually a cake mix lover, but had one on hand. I used a 9 x 13 cake pan, and used a 20 ounce can of pineapple rings (because that is what I had in my pantry!) - will try as written next time - easy, delicious & fast. Best eaten warm right from the oven (gets a bit soggy by the next day).

Apple Cake V

I was so dissapointed in the topping for this cake. It was watery and made my cake kinda soggy. Everyone ate it and enjoyed it with icecream, but they didn't know that I poured a whole stick of melted butter on top! I think that this cake is worthy of trying again, with a streusel-like topping. I added 1 teaspoon of cinnamon to the cake, and an extra 1/2 cup of apples.

It's Chili by George!!

WOW - adding a few extra spices makes all the difference in an awesome chili. I didn't have tomato juice on hand, so I used a can of diced tomatoes. Also did not have a green pepper. Topped it with cheddar cheese and crushed white corn tortilla chips. Other than that, I followed George's directions and had the best chili I've ever made. Thanks!

Bread Pudding I

Excellent! A water bath is NOT needed to make this recipe, as others are suggesting. The baking time is a bit off, as it took mine 55 minutes to fully set in my 2 quart Pyrex dish. I used an entire small loaf of Pepperidge Farm's Cinnamon raisin bread, 1/3 cup raisins, butter, and only 5 eggs - following the directions as listed. Also, I used cold milk and omitted the nutmeg. Used melted vanilla ice cream as a sauce and it was a hit! So easy and delicious!

Chicken Enchiladas II

My family loved these - better than my other enchilada recipe. We prefer the taste of flour tortillas, so no complaints there. I didn't have a can of green chilies - so used a half of a can of diced tomatoes with hot chilies with the juice and omitted the milk. Also used a rotisserie chicken and a added some cooked brown rice to each enchilada. This is my new chicken enchilada!

Pecan Squares Cookies

These were delicious as written, but I found the center ones a bit on the fall-apart gooey side. Maybe they should be made in a 9x13 pan, or make an extra half-batch of crust - OR, maybe I should just bake them longer next time. These will be a MUST at the holidays!

Chicken with Lemon-Caper Sauce

I made a triple amount of sauce (for 6 chicken breasts) but cut back on the lemon juice to 1/4 cup, 3/4 cup wine, 1/2 cup chicken broth, 2 Tbs. cornstarch, and 1/4 cup butter. The wine taste was so heavy that I had to add the chicken broth. CHANGES I WOULD MAKE Next time: increase chicken broth and use less wine, use half the flour (too much waste), only double the sauce (too much left over), and pound chicken to even thickness. I would continue to cut back on the lemon & butter.

Chicken Pot Pie IX

Yum! I used a few shakes of garlic powder and bag of mixed veggies & added 2 diced potatoes (boiled with veggies in broth & reserved for the sauce). I used to used canned cream of potato soup in my pot pie, but NEVER again!

Peach French Toast

I added a pint of fresh blueberries to mine & it was delicious! The only other change I made was to use 6 eggs. I would love to try this with cinnamon bread sometime. Also, I break up my bread into bite-sized cubes - I think it all bakes up better and is easier to serve. My family loves these easy breakfast bakes - thanks Geraldine!

Glazed Lemon Bundt Cake

What happened to my cake? I have no idea! I am an experienced baker and this cake turned out awful! The texture was gummy in parts (where the glaze hit), and completely crumbly & falling apart everywhere else. Came out of the pan in several peices & couldn't serve. Even tasted bad. I used the half lemon juice/half milk - but everything else was the same.

Tortellini, Steak, and Caesar

Everyone enjoyed this easy summer meal. I omitted the croutons. The only change I would make next time is to use half the olives (too many!) and use less dressing (I used about 1/4 the bottle) because it can be overpowering.

These were very good - I doubled the recipe and added 1 tsp. cinnamon. The only other change I will make next time will be to use an unsweetened "all-fruit" jam to cut out some of the sweetness and try half applesauce for half of the butter.

Cheese Garlic Biscuits II

I don't know what happened with these, but the texture was gummy and crusty and not what I am used to. I wanted to find a recipe to make without Bisquick mix, but I'm going back to "Garlic Cheese Biscuits" on this site, they are much better.
