My favorite things to cook
I'm often a lazy cook. When my husband and I finally manage to get home from work, it's late and we're tired. By the time we get around to thinking about dinner we only have the energy for something easy. I have my 'staples', but every now and then boredom leads me into experimentation. I've really grown a lot as a cook this way. Some good, some not so good, but at least now I know!
My favorite family cooking traditions
My Dad was the cook in our family, and since he traveled with the military he liked to bring home new and sometimes strange dinner ideas. Half of which I couldn't spell if I tried. It taught me to be open to new ideas and new foods. Even the ones you don't want to ask too many questions about...
My cooking triumphs
I was six and mastered tuna-mac. It marked my independance and cemented a life-long love for a box of macaroni and a can of tuna fish.
My cooking tragedies
I've had failed experiments and stupid blunders, but I couldn't call them tragedies. If you learn from them and laugh them off (and always keep a frozen pizza around) then it's easier to refer to them as experiences rather than failures. Who's really going to care in 5 years that you managed to completely destroy a stainless steel and copper saucepan steaming broccoli?

Italian Style Meatloaf I
It was good. Great flavor, but fell apart completely. Plus, it took MUCH longer to bake through. Haven't decided if I'll make this one again or keeping looking, but it was a good experiment.

Clemons Family Bean Dip
Yum! We LOVE this dip. When my husband first tried it he said "Now THIS is what a bean dip should taste like". It really is better the next day. I sent my friend home with some leftovers and she texted me this afternoon telling me how she has to have the recipe. Now my husband's eating it again and says we should always have this on hand. And it's easy enough that HE can make it! I made it as written- including the full jar of jalepenos with juice (HOT!). Only difference was I did use the Mexican cheese product and refried black beans since I like them better. I can see how the chorizo would be great, I'll try that next time. Will definitely be making this again. And again and again and again...

Balsamic-Glazed Salmon Fillets
This was a pretty good recipe. Nice and flavorful and pretty easy to make. Maybe we under seasoned, but it was just slightly lacking that "smack" that I was expecting with the basalmic. Overall though, definitely repeatable.
