Laura's Lemon Roasted Potatoes
Made these as mashed potatoes using the following modifications: quartered, boiled and mashed potatoes. added ~2T of olive oil to water. in a small fry pan, combined ~2T butter, fresh lemon juice, garlic dill weed, salt pepper until simmering. Once potatoes were mashed, added the remaining ingredients in. also added milk to desired consistency. Delicious! served with sage pork chops (available on this site) and green beans.

Sage Pork Chops
Made this with modifications: omitted salt, but added lemon pepper and lemon zest. My chops were very thin and i think i over-cooked them, so they were a little tough. These came out VERY spicy, but that was probably because of the modifications I made. For the gravy, i took the chops out of the pan, added about 1/2 c of the beef broth, and then thickened up with flour. Would definitely do that again! would like to try again without lemon pepper and thicker chops. that being said, my 3 year old said they were "tasty" and ate a whole chop with no prompting! : )

London Broil II
Super Easy! I didn't have soy sauce so i made the marinade with worcestershire, which made it a bit strong, but it was still delicious. I marinated 8 hours and broiled 7 mins per side, which was too much; next time i will do 6 minutes a side and i think that will be perfect. Served over spinach and tomatoes as a salad.
