About this Cook
I love to cook. I usually "wing it" except, of course, when baking. I have a few signature dishes, but love to expand and try new things. I have a family of 3. My husband, 7 year old daughter and myself, but usually cook for an army! LOL. Leftovers are usually prevelant in my fridge, and end up getting tossed, not because they're not good, just because I seem to cook a "meal" every night. I'm a meat and potato kind of girl, but seafood could get me every time. Love that surf and turf and occasional dessert.
My favorite things to cook
Dinner. NO doubt. But I love breakfast, brunch kind of foods too.
My favorite family cooking traditions
Making my own birthday cakes for my daughters theme parties every year, and decorating from scratch.
My cooking triumphs
Having my recipes distributed to dozens of friends and relatives. Usually "made up" kind of dishes.
My cooking tragedies
Boiling eggs to the point that the pan dried up, and the eggs exploded all over my kitchen. What a smell. (I was reading a really great novel!) The pan was destroyed and my husband teased me for years.... "Are you cooking something?" "no....... OH CRAP, the eggs!!!!"

Spinach Quiche
Lovely quiche. I make only one, minor change, I take about 1 teaspoon of dijon mustard, and smear it around the bottom of the pie crust before adding spinach mixture. Just adds a little tang, which we love!

Spooky Halloween Eyeballs
These came out soooooo cute. My daughter had a half day of school today, so I made all of the peanut butter balls and just put them in the fridge for a couple of hours, then we did the fun stuff. Be sure to place your mini-chips in as soon as you do the retinas, the white chocolate seemed to set up pretty fast. They do, indeed, taste like peanut butter cups. I already have plans for Christmas, just subbing semi-sweet for white chocolate, and sprinkling with festive decorator sprinkles. Thanks for a great tasting, fun recipe!

Old-Fashioned Chocolate Fudge
Spec-friggin-tacular! I followed the directions exactly and other than the fact that it took a little longer than I expected to get to temp, it worked out perfectly. In the last minute of beating it, I added a 1/2 cup of chopped pecans, just cause I love em. This was wonderful. A great recipe to share with friends, this is a keeper! Thanks!
