Grandma's Gingersnaps
The dough was on the messy side but the cookies came out well. I found that if you make them on the smaller side you get more of a snap. Ones that were on the larger side were softer & less uniform (therefore the baker ate those ;-) ).

Russian Tea Cakes I
4.5 stars actually - my husband loved these! However, I'm glad I did a test run first before adding these to the Christmas tins. I ground up the walnuts in the mini-food processor and made sure the butter was very soft, per others suggestions. So the dough was no problem and overall this was a very easy recipe. My cookies must've been a little too big though cause I only got 28 cookies out of my batch. Also, be sure to let them cool well before rolling in sugar - my first dozen I must've rolled too soon and they were quite sticky and I ended up using more than 1/3 C. confectioner's sugar to coat them all. And they taste even better the next day!

Cranberry Oatmeal Cookies
Great use for leftover cranberries! I added chopped walnuts instead of raisins (a heaping half cup)and left out the chips 'cause I didn't want the cookies too sweet. They came out moist & delicious & are quite addictive!
