About this Cook
I'm a nurse practitioner who enjoys cooking as a hobby but also a stress reliever. When I'm feeling really stressed from work, making breads, or desserts, is a relaxer for me. Then I like to bring the food in the next day to share with my coworkers. I also like entertaining.
My favorite things to cook
Baked goods, especially no bake or that don't require much fuss. All the items are in my cabinet and I don't need anything extra special.
My favorite family cooking traditions
At Thanksgiving, it is a must to have green bean casserole and made from scratch cranberry sauce.
My cooking triumphs
Cracker porkchops, bacon wrapped filet mignon, and baked tilapia.
My cooking tragedies
I tried to make mexican cheese dip. Somehow, the cheese was runny yet chunky. Needless to say, it went in the trash. Also, I've tried to make wacky cake several times. It's my boyfriend's favorite. Each time I made it, it's nothing like his mom's. So I finally got the recipe from her. I'll try again soon to make it.

Ginger Glazed Mahi Mahi
This was ok. My glaze wasn't really a glaze. I think next time I'll add less vinegar and add more ginger. I couldn't taste it. But it's a good starter recipe.

Pumpkin Spice Cupcakes
Fantastic. I added about 2 cups of pumpkin and a little more clove and cinnamon to the mix. A big hit at work.

Chocolate Chip Cheesecake I
I made some adjustments. I used 2 bars of 1/3 fat cream cheese and 1 bar of regular cream cheese. I also used fat free condensed milk. I followed all the other instructions and the cheesecake turned out great. No crack and I didn't use a water bath! I did add more chocolate chips to the top (because I like chocolate chips) but in the mix you couldn't really see them mixed in. They did sink to the botton after tossing them in flour. Overall, a big hit with my coworkers.
