Bacon and Cheddar Stuffed Mushrooms

I made these for a crowd of 14 last night and they were a big hit! Who doesn't love cheese, bacon and mushrooms?! I added some garlic powder, dried parsley flakes (for color) and some bread crumbs. They were very good!

Chicken Tikka Masala

Holy cow this was delicious!! I followed the recipe exactly and wouldn't change a thing! I can see how some people said it was too salty but for me it was just fine once paired with rice and naan bread. SO GOOD!

Bacon-Roasted Chicken with Potatoes

My husband would give this 5 stars the way he ate it but it differed from the original recipe based on the others' comments on here. I used the frozen chicken breasts from a bag (still frozen). I covered the chicken with slices of bacon instead of wrapping them. I used cubed red potatoes and sprayed them and the onions with olive oil before cooking. I seasoned with dried rosemary, Italian seasoning, garlic powder, salt and pepper. I baked it at 400 degrees and it only took 40 minutes to cook! At serving time I sprinkled reduced fat Feta cheese on top! Delicious!!

Adobo Chicken with Ginger

This is so easy to make and equally delicious! I've been craving it ever since I made it! I sliced a yellow onion into 1/4" slices and sauteed those a bit before adding the chicken and liquids. It adds a little something extra! YUM!

Red Snapper Livornese

WOW! This recipe was such a snap to make(no pun intended)! The flavors were just popping in my mouth. To save time I used a 15 oz. can of Italian style diced tomoatoes (drained), a small can of sliced olives and followed the rest of the recipe to the T. It couldn't have been better. I served it with pan fried polenta cakes and steamed broccoli. Thanks!

Sausage Pepper Skillet

This is so good and easy! You can use the frozen bag of stir fry mix (tri-color bell peppers & onion) instead of fresh for an easier preparation. I cooked that mix in the oil for about 3 minutes before adding the remaining ingredients. I served this over the Cheese Polenta recipe that I got from this site and topped with fresh Italian Parsley! So much flavor! YUM!

Broccoli Soup

YUM! This is so good and healthy! I love that this doesn't have any cream in it yet it's definitely creamy and hearty! I skipped the nutmeg and added lemon pepper seasoning instead, along with some crushed red pepper flakes. Can't wait to have another bowl!! :)

Chorizo and Lentil Stew

This recipe was good but I thought it lacked in a couple of areas. My family likes A LOT of flavor so that may be why. I added Corriander to give it a little more brightness. Next time I will add a leafy green such as Kale. It could use the texture of something like that and why not fit in something extra nutritious whenever you can?! I'm looking forward to making this again!

Chicken Enchiladas Suizas

These were delicious!! I used Kraft Fat Free Cheddar for the filling and used regular Monterey Jack on top. In order to make my sauce thicker I simmered the cream until it was reduced by half and then added the green salsa. It wasn't so runny doing it that way. I'll be making these again for sure!!
