About this Cook
I, like most everyone else, am a "work in progress". Since I had my first child in January 2008 I realized that I have no idea who I am or who I am "supposed" to be (even though just a few years ago I had it all figured out!) and I'm better off not knowing because that way maybe my expectations will be more realistic!! I LOVE my daughter more than anything in the world but she certainly makes me question everything in life way more than I ever did before. That's a good thing right?!
My favorite things to cook
Pretty much anything. I mostly enjoy creating Mexican dishes but I really just enjoy the whole process of cooking in general.
My favorite family cooking traditions
Growing up my family didn't have any traditions but now that I've got a family of my own we've started the tradition of making Tamales around Christmas time as well as different types of fudge.
My cooking triumphs
Before becoming a stay at home mom I developed recipes/dishes for grocery stores and restaurants on a daily basis. In my opinion every time one of my recipes was approved by a customer it was a triumph! It's very exciting to go to a store or restaurant and see something that I've created on the shelf or on the menu!
My cooking tragedies
There are no tragedies. It's all a learning experience!

Bacon-Roasted Chicken with Potatoes
My husband would give this 5 stars the way he ate it but it differed from the original recipe based on the others' comments on here. I used the frozen chicken breasts from a bag (still frozen). I covered the chicken with slices of bacon instead of wrapping them. I used cubed red potatoes and sprayed them and the onions with olive oil before cooking. I seasoned with dried rosemary, Italian seasoning, garlic powder, salt and pepper. I baked it at 400 degrees and it only took 40 minutes to cook! At serving time I sprinkled reduced fat Feta cheese on top! Delicious!!

Adobo Chicken with Ginger
This is so easy to make and equally delicious! I've been craving it ever since I made it! I sliced a yellow onion into 1/4" slices and sauteed those a bit before adding the chicken and liquids. It adds a little something extra! YUM!
