Don't let the simplicity of this recipe fool you (as it almost did me). It's WONDERFUL and lends itself to numerous variations/additions. Don't skip beating the egg whites! It is key. Beating the egg whites makes the batter light and fluffy (instead of runny), which magically makes it so that the batter doesn't drip out all over your kitchen counter if you get too much in your waffle iron. It's my new go-to waffle recipe from now on.

I melted the butter in the microwave and then, oops, forgot to add it to the batter. Didn't realize my mistake until after the muffins were baked. They were very yummy nonetheless. So, if you're trying to save a few calories... I also threw in about a half cup of dried chopped dates that I had on hand. Good stuff!

Wow! So good! Funny story. My daughter (20) wasn't going to eat because she didn't look how the chicken looked while I was preparing it. But when it was done, I whipped out the mother guilt (my prerogative, right?) and said the least she could do was try it after I went to the trouble of making it. She did not want to try it, but I sorta begged, until she finally said, "FINE!!!" She took a bite off the fork my husband held out to her and then started stomping off to her room. After she got about halfway there, she stopped, turned around, and said, "Okay, I'll have some of your chicken." True! :-)

These muffins were good / fine. I followed the recipe exactly. While I wouldn't say they were "to die for," I could see myself making them again.

Made this the other night for my family. I will admit to some mild trepidation about using all that vinegar (especially after reading prior reviews), but I needn’t have worried. I followed the recipe exactly, and everyone loved it. My husband was still talking about it the next day! The chicken was tender, and the sauce was beautiful and delicious. I served it with parmesan couscous (Near East brand), and it was the perfect accompaniment, giving the dish a sort of Middle Eastern flavor. The only modification I made was using all fresh herbs. Will definitely make again.

I made this as directed by the recipe. So, so good. It made two quiches. My husband and I consumed an entire one for dinner last night and had leftovers for today. I'm sure it would be great to subsitute broccoli and cheddar or maybe shrimp/crab, red pepper and mozzarella. Really, this recipe lends itself to numerous variations (which I plan to try). Quick, delicious and a beautiful presentation.

Made this last night and used up a lot of my leftover turkey. Yeah! My hubby and I thought it was delicious. My 19-year-old daughter thought it was too rich. I did add 1/3 extra cup of parm to the top and some celery, but I don't think it affected the overall results very much (I know there are people who hate reviews that are not strictly based on the original!). I would absolutely make this again.
