Authentic Louisiana Red Beans and Rice

yum! this was very good but too spicy for my tastes. I added a bit of salt, but otherwise followed the recipe as written. This was easy to make, but time consuming because you have to let it boil for so long, but to me it was worth the wait. Next time I make this I will for sure use less hot pepper though, I wanted to eat more but my mouth was on fire! For me, the sausage adds enough heat on its own, I won't add any other hot ingredients next time.

Award Winning Soft Chocolate Chip Cookies

Hands down, this is the best cookie recipe i've ever made. I cut the amount of chips in 1/2, because I like to taste more cookie than chips, and added about 1 cup of chopped pecans. Then I rolled the whole thing out into a big circle, and with a sharp knife i cut a heart shape out. I used the scraps for regular shaped cookies, and made a cookie cake out of the heart. I baked it on parchment paper and it came out so beautiful. This was very moist and chewy even 3 days after it was baked. YUM!

Fluffy Biscuits

Hmm.. These were just okay. I guess I fall into the group of people who thought that these were a bit bland. They were very beautiful, but just didn't taste like much. I only kneaded these about 5-6 times, not 20, that would have been way too many. That is why some peoples have come out so dense. I also used 1/4 butter 1/4 shortening. This wasn't a big enough kick for flavor. These need some salt for sure. I ended up having to brush the tops of these with lots and lots of butter to make up for the flavor. It's too bad, because I made these to show an English friend what "real American biscuits" are, and I sort of feel like I should have just bought some Grands.

Wow, this was amazing. I made it a little less work by using rotisserie turkey breast. This was very simple and very very good. It also reheated very nicely.

Big Soft Ginger Cookies

I am just finishing up baking these, and they are very tasty! They have a spicy sweet flavor. I followed the recipe almost to a T, here are the few slight changes I made: 1) I added a dash of dried ground orange peel 2) I didn't have any cloves, and don't really enjoy their flavor, so I replaced them with nutmeg 3)I used butter rather than margarine 4) I didn't roll them in sugar The flavor of these is very nice, not too sweet not too spicy. They are very festive for fall/winter and will go great with some apple cider! The only thing that was bad about this cookie was how hard to handle the dough is. I put it in the freezer for about 30min and it was still very very sticky and hard to work with. I had to flour my hands between every cookie ball. I also found it unnecessary to press the cookie balls down because they spread a lot while cooking. Next time I make this I may add a pinch more baking soda so that they don't end up so flat.

Simple Whole Roasted Chicken

I just got done eating this for dinner, and it was great. I used totally different seasonings, but followed the cooking method to a T. I was looking for a way to bake a chicken and have it come out juicy, and this really did the trick. We baked it breast down for the entire time and then flipped it and cooked it breast up for another 5-10min to crisp up the skin, and it worked out great. This will be how I bake chickens from now on.

Hot Crab Dip

this was a good base, but I just don't think canned crab meat is for me. I bought canned "lump crab meat" and I got the name brand kind, just because I thought it would be tastier, and it was just too fishy and sort of had a fishy smell to it. It also was canned with water, so it had like a squishy water texture going on... it was odd. Maybe I bought the wrong kind of crab? I know it wasn't expired... I think if I used fresh crab meat this would have been awesome, because the cream cheese base was very good. I'll have to give it another try.

Mini Sweet Potato Pies

these were very good. I could eat like 50 of them by my self! One thing I will do differently next time - since i'm using premade, already flat rolled out dough - is to just tear off pieces of pie crust and loosly drop them into the cups, rather than roll it into a ball, then try and smooch and fit the ball into the cup. It over works the dough to ball it up first and then reform it to the cups, not to mention time consuming and frustrating. So just tear off a piece that looks about right and fit it in, and then touch up around the edges with extra dough if you need to.

Awesome Sausage, Apple and Cranberry Stuffing

This was a great start. I added a few things and tweaked it a bit to fit my tastes and really enjoyed it. One thing i did not do (beacause on thanksgiving the oven was already full) was toast the bread, and I wish I had. I will not skip that step next time!

Delicious Ham and Potato Soup

I think I messed this up a little by putting it in a slow cooker. It seems like it sucked all the flavor out of it to cook it for so long... so next time i'll make this as written. After I added a bunch of garlic powder, salt, and onion powder, it was very good. It was even better the next day.

Mom's Sushi Rice

very good! I was nervous to try and make sushi for the first time, but this rice turned out awesome. I was a lot easier to cook than i thought it would be. Over-all though-sushi is a pain! hah i'll be going out to eat for sushi next time.

Chicken Pot Pie IX

This was awesome! I tweaked it just a bit, because i'm lazy lol. I didn't bother with the crust, I just poured the filling over egg noodles, and it was so amazing and tasted great as left overs the next day. This was a little time consuming, but I think if I make it a few times, i'll get better at making it quicker. One thing else I did differently, was I just used the broth from the boiled chicken and veggies, rather than drain that and use canned broth. Why through away broth only to pour in more broth? I had to spoon a little liquid out so it wouldn't be too watery, but I liked using what I made, it had less salt and was fresher. Thanks for this amazing recipe! I will make it again for sure!

Cream of Pumpkin Soup

i'm sorry, this just wasn't for me. It turned out very salty. When you first tasted it, it was way too salty, then it was sort of spicy from the black pepper, and then the aftertaste was like diluted pumpkin pie... yech. It was easy to make, which is nice, and could have had potential if I would have bought low sodium chicken broth, or maybe just made my own with some boiled chicken and veggies.. but overall this was just no good. Sorry.

Andouille and Chicken Creole Pasta

Man. I am stuffed! I just got done eating this and it was awesome! It took a moderate amount of time to cook, about an hour and 15min. Most of that time was spend chopping veggies-easy enough to do. I cant believe that the only spices in this are creole seasoning and chili powder (i used about 1 tbs of creole, so that it wouldnt be overly spicey, and then made it up to the heat i wanted by adding chili powder) This tastes like a lot more would go into it, very yummy! The veggies can be customized to whatever you're in the mood for and same with the pasta. I wasn't able to find andoullie sausage so I just used italian, and it came out really good. I didn't find this to be overly salty and I used Tony's Creole seasoning. I will make this again for sure, it was really good.

Banana Banana Bread

The texture of this bread was perfect. But as far as flavor goes, i felt like a little something was missing, i couldn't really put my finger on it.. This is such a great base recipe though that I cant expierment with differnt spices each time I make it. Thanks for posting it!

Best Fried Green Tomatoes

These were a good start but the breading seemed a little thin, i'll have to expirement with that a little.. The breading did not fall off when I cooked it though, which was really nice. Overall this is a very good start.
