I am married to a wonderful man for 10 yrs. We have 3 children and one on the way. I'm a registered nurse working part time in an ICU. I love to cook and spend time in the kitchen.
My favorite things to cook
oh the sweet stuff..... cookies and cakes. I'd like to master my own crust for pies but for now pillsbury will have to do.
My favorite family cooking traditions
Christmas cookies....esp the cut outs with frosting and decorations. My 3 kids love to help ( ??? ) and its such a mess with frosting and sprinkles from one end of the kitchen to the other!!! Oh well, they are only little for a while!!
My cooking triumphs
When ever I make a meal that my family says " mom this is so good " and luckily thats quite often!
My cooking tragedies
Once when I was younger the recipe said mix by hand and I took that literally. So I stuck my hands in and started mixing, it didn't seem quite right and I realized my funny mistake when my mom came in the kitchen and said what are you doing. We still laugh about that to this day!

Banana Muffins II
Sometimes simple is best!!! These are by far the best banana muffins I have ever made and I've been cooking for over 20 yrs. I did substitute 1/2 c of the white flour for whole wheat, added 1 tsp vanilla, chopped walnuts and choc. chips. The key really is to NOT overmix! Super simple and delicious!!!

Peach Cake II
Excellent cake, would make again and recommend it others. I only had 3 fresh peaches so I also added a large can of peaches and it worked out fine, actually could of used even more peaches than that. As others suggested I used alittle less oil and replaced with the peach juice from the canned peaches. Cinnamon was perfect, could of used alittle less sugar but that just depends on your preference or severity of your sweet tooth!! Overall it's a keeper!!

Strawberry Vanilla Pancakes
These were so good and will definately make them again. Yes, batter was thin so I added alittle more flour and they were perfect!!
