Chicken and Brussels Sprouts Casserole

Lasagna Alfredo Roll Ups

Since I didn't have any Alfredo Sauce in the house at the time and just wanted to try the roll ups I used a tomato sauce. Came out very good. Easy to make, easy to serve. The roll ups were a nice change to the basic lasagna.

Brown Sugar Meatloaf

First let me start out by saying I hate meatloaf. Everyone says try mine, it's the best. I still don't like it. On the other hand my wife LOVES meatloaf. It's her favorite comfort food. So in saying that, I was nice, made dinner and made the dreaded meatloaf for my wife. Well, my wife LOVED this one. I even got a nice hug for making it. She loved the flavor and couldn't find anything she didn't like about it. I on the other hand thought it wasn't too bad for meatloaf, had two small pieces. But I still hate meatlof. My wife says this is a keeper! I did find that I had to bake it a bit longer than the 1 hr. I also put a bit uf ketchup on the top for color.

Iced Mocha Fusion Shake

This Is Great.....I used Folgers CAFE LATTE, MOCHA FUSION instant mix which also comes in a few different flavors such as Vanilla, Mocha Almond, Caramel and a couple of others. I also cut the sugar down just a bit. This is a great summer drink for those who like "Foo-Foo" coffee's or iced coffee drinks. This has become a regular for my wife and I.

Cabbage Fat-Burning Soup

Great recipe, it does take some time to chop everything up but, well worth it. Since there is only the two of us I cut the recipe in half. It still made plenty of really yummy soup. This is a keeper and has been added to my regulars. And the funny thing is, it's good for you too.

Texas Hash

I found this recipe to be quite good. It's sorta like a beefed up Spanish rice. My wife loves Spanish rice and was impressed with this casserole. I on the other hand am not a big Spanish rice fan but I did enjoy this. I'm sure this is one that will be made again.

Baked Onion Rings

This was NOT one of my favorites. Although an easy recipe, the cornflakes with the sugar tasted just like that, a bowl of cereal with onions. The other seasoning didn't help. After dipping the onions into the egg and getting the egg mixed into the coating the coating did not want to stick to the onions. Not likely to try this one again, sorry.

Ham and Asparagus Fettuccine

Ran accross this recipe when looking for something to do with leftover ham. Since I love Asparagus and pasta I gave it a try. I was very pleased, great flavor, easy to make, made me smile. Not for those folks on a diet though or maybe you just want to cheat....a little. Highly recommend.

Chicken Cordon Bleu II

This has got to be the very best Chicken Cordon Bleu recipe I've ever had. The sauce is an excellent compliment to the chicken. I'll never look at another Chicken Cordon Bleu recipe the same way again. This is a real keeper.
