Slow Cooker Chicken Stroganoff

We were without power due to Ike, so needed a crockpot recipe, as we could plug that into the generator. Used skinless thighs, as that was what was on hand. Pretty good flavor and easy. Served over whole grain penne. Did not have cream of chicken, so used a can of beef gravy mixed with a chicken gravy packet. Should have mixed the cream cheese more thoroughly, and next time will add a little milk to make more sauce.

Award Winning Soft Chocolate Chip Cookies

Cut recipe in half and got 6 dozen out of it! Made first batch without nuts for the grandson and then added 1 cup chopped pecans to remaining dough. Soft and yummy - a hit. Thanks for sharing.

Kielbasa and Bow Ties

Sprayed pan with cooking spray and sauteed sausage; drained as much grease as possible. Put 1 large diced onion and one diced red bell pepper in pan with sausage and cooked until the tender; sprinkled with garlic powder. Used 1 can diced tomatoes and 15 oz can tomato sauce. Cooked whole grain penne separately and added in at end of cooking time. Hubby loved it.

Avocado Feta Salsa

Made with 2 Roma tomatoes, as they were on hand, 2 avocadoes, 1 bunch green onions, teaspoon minced roasted garlic, 1/3 cup cilantro, tablespoon oil, tablespoon red wine vinegar, 2 oz feta, juice of 1/2 lime and about a tablespoon of orange juice. Everyone loved it!

Pecan Breaded Chicken Breasts

Wonderful idea!! Used boneless pork loin chops because that is what we had on hand - they were quite thick and frozen, which I thawed IN the maple syrup and left in the syrup for another hour or so to marinate somewhat. Then put pecans in food processor until finely ground and patted firmly into the chops. Browned in a mix of butter and grapeseed oil and then placed in 325 degree oven for an hour or so to insure they were completely cooked and in an attempt to tenderize. Great flavor - didn't add any other seasoning (a rarity for us) and reasonably tender too. Thanks for a great idea - will use on chicken breasts (or thighs!) next.

Beef 'n' Eggplant Pie

Turned out very tasty. I did not measure the onion or eggplant, just used a whole one of each, and peeled the eggplant in hopes that it would disguise it enough to fool picky hubby! Sauteed the onion, eggplant and garlic together, while browning the ground meat in another pan, in order to drain the fat from the meat. Then put all in pan together with tomato sauce and seasonings before placing in crust to bake. Yummy. Thanks for a sharing!

Oatmeal Pancakes

Great way to get the little ones to eat some oatmeal! I thought it had too much milk - next time will cut it down to at least 3/4 or maybe 2/3 cup, or 1/2 cup with another egg - to give them some more protein. Added some cinnamon and used about 1/8 cup sugar/Splenda mix, so they would not need so much syrup. Thanks for a wonderful idea for a nutritious breakfast.

Chicken Hurry

This was exactly what I was looking for tonight - EASY, yet yummy. Lined the pan with foil and used to bone-in skinless breast halves, but all the sauce. Per another reviewer's suggestion, did not cover, and cooked for an hour. Tender and moist with minimal effort on my part. Stuck a potato in the oven beside the pan - what could be easier? Thanks for a great idea!

Barbecue Ribs

Everyone loved this. Seasoned ribs with a rub before baking and did not finish off on the grill because it was unavailable, but they were tender and great anyway. Several people mentioned they loved the sauce, and I will be using the sauce on chicken as well. Thanks for sharing!

Blueberry-Sausage Breakfast Cake

Had a "best" family breakfast, but this has been voted the new favorite. Cut the recipe in half for 6 people and cooked in an 8 x 8 casserole. Should not have halved the sauce, as it was not enough by about 2 portions - we got 9 squares. Used fresh blueberries. Used pam to grease the dish and used lowfat plain yogurt for half the sour cream amount, as that is what we had on hand. Did not bother with the pecans and used Jimmy Dean's lowfat sausage. This is an excellent recipe and we will be having this again. Thank you, Peggy, for a recipe even hubby, who doesn't care for blueberries, enjoyed.

Banana Pudding IV

Made this for Easter and really enjoyed it - only had 3 bananas, but that didn't seem to bother it. As another reviewer suggested, I broke up the wafers and that was a great suggestion, as it made it easier to serve and eat. Thanks for the recipe, Patty.

Breakfast Pie

Awesome! Love that it doesn't have bread in it and everyone thought it was the bomb. Had for Christmas morning and everyone raved. Just put 2 potatoes in the microwave until cooked and cut up for the hashbrown part, everything else as written. Perfect.

Sausage-Potato Casserole

Simple to make and my meat-and-potatoes hubby loved it. I sliced the sausage into bite-sized pieces. Put it together and in the foil early in the day and refrigerated until about an hour before dinner. Thanks for sharing.
