J.P.'s Big Daddy Biscuits

Reviewed: Sep. 28, 2009
These are really fluffy, big biscuits! Used butter, as did some of the other reviewers. Made a little early,so put in PAMed and buttered foil, as suggested, and refrigerated until ready to pat out and cut into biscuits. Very tasty; thanks for sharing!

Creamy Chicken Lasagna

Reviewed: Sep. 13, 2009
This was pretty good; we enjoyed it and thanks for sharing. I sauteed a red bell pepper and an onion to add to the spaghetti sauce to make it more like my regular sauce. Covered for the first 30 minutes of cooking so that the cheese on top would not brown or burn. Next time will add garlic to the sauce as well.

Apple Betty

Reviewed: Aug. 28, 2009
Like kathyd, I added more apples - just used 5 granny smiths and ended up with a little over 5 cups. Did not peel the apples, for nutrition - how healthy can it be with a stick of butter, tho!! My sis was here and, after everyone was done, grabbed a spoon to scrape the last remnants from the dish. I added more cinnamon and a little oatmeal to the topping. Yummy!

Marinated Turkey Breast

Forgot the cloves and this turned out awesome! Used turkey tenderloins that were pretty large. Put the rub on and placed in the marinade early in the morning and grilled this evening to rave reviews from everyone. Thanks for sharing.

Big Soft Ginger Cookies

Reviewed: Aug. 22, 2009
These are just what I hoped they would be. Used a whole teaspoon of cinnamon and 2 1/2 teaspoons of ginger. Used blackstrap molasses and forgot to substitute orange juice for the water, but they were great anyway. Next time. . .

Bryan's Spicy Red Lentil Soup

Reviewed: Aug. 10, 2009
This was very good, but we ended up having to add way more liquid than the recipe calls for. I added another cup of water and it still needed more. I didn't want to lose the flavor by adding more water and thought tomato sauce would do, but didn't have any, so ended up adding a can of tomato soup! It was good and relatively healthy. We did not put it in the blender either, but briefly used the immersion blender. Also sauteed some carrots with the onions at the start. Thanks for sharing.

Spring Strawberry Spinach Salad

Reviewed: Aug. 8, 2009
Wonderful. Used 1/2 cup oil in place of the whole cup and added 1/3 cup diced purple onion and toasted almonds. Made the dressing (just stirred with a fork), several hours before serving and sprinkled the poppy seeds over the salad greens just before adding the dressing. So good. Thanks for sharing.

We did not care for these; too salty tasting (don't know why with only 1/4 tsp salt, and kind of dry.

Easy Pizza Sauce III

Great flavor and easy. Added 1/2 tsp Basil; 1/2 tsp sugar; 1/2 tsp onion powder; 1 1/2 tsp garlic powder and 1/2 tsp onion powder, as suggested by other reviewers. Just over the amount needed for our huge cookie sheet pizza. Thanks for sharing.

Quick and Easy Pizza Crust

Reviewed: Jul. 17, 2009
Excellent flavor for such an easy and quick recipe. Made into a large crust for our huge cookie sheet. On the advice of other reviewers: mixed by hand; added 1/2 tsp basil, 1/2 tsp oregano and 1/4 tsp onion powder to the olive oil before mixing into the flour/yeast. Let rest 15-20 minutes. Great flavor and cooked up fine in 20 minutes. Thanks for sharing

Used 1/4 cup butter; 1/4 cup butter flavored shortening; 3/4 cup brown sugar and 1/4 cup Splenda; and 3/4 cup crunchy peanut butter. Other than that, made as directed and they turned out to have great reviews by both hubby and grandson. Thanks for sharing.

Mom's Cucumber Salad

Reviewed: Jun. 22, 2009
Used 3/4 cup of miracle whip and only had 3 cucumbers, so that was too much. Peeled, sliced and place the cukes in a colander over the sink and sprinkled with salt. Let sit for about 30 minutes, then made the dressing with 3 packets of stevia instead of sugar and apple cider vinegar instead of white. Did not measure the dill or seasoned salt. Blotted the cukes with paper towels before adding to the dressing. Pretty good stuff.

Vintage Lemonade

Reviewed: Jun. 19, 2009
Used the lemon zester on the lemons; mixed with the sugar and stirred. Juiced the lemons and put in the refrigerator to get all the juice while waiting for the sugar/zest mixture. Added the boiling water and, when cooled the required time, added the juice and drained over a mini colander to keep the zest out of the finished product. Excellent flavor.

Banana Chocolate Chip Cake

Reviewed: Jun. 1, 2009
I followed the advice of a lot of the other reviewers and used baking soda instead of powder, most of 3 very ripe bananas, a full cup of sugar (actually 1/2 cup Splenda and 1/2 cup sugar) and 1 tsp vanilla. Also, as I had bits of both on hand, I used half chocolate and half white chocolate chips. Because of all the confusion over the pan size and because I wanted to give these to two different people, I made muffins. It made 16 muffins - not 24 servings as the recipe states. Hubby thinks these are very good!

These were great. Used 95% lean beef and about 8 reduced fat Keebler club crackers and a whole package of the Ranch mix with a whole diced onion. They stayed together for grilling and had a great flavor. Thanks for sharing.

Beef and Tomato Pie

Reviewed: May 20, 2009
Used 1/2 cup milk and a can of fire-roasted tomatoes(instead of fresh)as the changes. Added a can of drained black beans and sauteed garlic with the onions. Pretty good - got to watch the crust at that temp so it doesn't burn. Hubby loved this with Old El Paso taco sauce over the top. Next time, will use thinner crust.

Did not put in the corn or parsley, and used less than half as much sausage (Down Home, of course). For the broth, used bouillon cubes. Yummy - dad's brother and my family loved it.

Caramel Apple Pork Chops

Reviewed: Apr. 8, 2009
Used 4 chops. Marinated, as suggested by another reviewer, in apple juice-soy sauce mixture for a little more than 24 hours. Then browned in pam-sprayed pan. Placed in foil-lined pan. Used one can of apple pie filling, as also suggested by the other reviewer, and sprinkled cinnamon and nutmeg over the top of the apples, after heating with 1/2 cup butter in pan. Covered with additional foil and cooked at 350 for 30 minutes, then uncovered and sprinkled with brown sugar and left uncovered for another 15-30 minutes. Yummy.

Catherine's Spicy Chicken Soup

Reviewed: Apr. 5, 2009
Everyone loved this. As another reviewer suggested, made the tortilla strips to go along with it. Only had 3 bouillon cubes, so added 2 TBSP poultry seasoning to the water that just covered the 8 chicken breast halves and cooked 20 minutes. While they were cooling, sauteed the onion and garlic till soft and clear; then added a jar of Newman's black bean and corn salsa, can of petite diced tomatoes, can of tomato soup and 2 cans of spicy chili beans. Cut up the chicken and added along with the broth and about 10 ounces drained yogurt. It was a very healthy hit at the family gathering!
