About this Cook
We've been married for 3 years now, but we still feel like newlyweds :) My husband and I enjoy cooking together and for each other. This site has been very helpful and has resulted in many successful dishes and happy dinners. I'm a middle school teacher with 4 preps! The Quick and Easy section is my friend on school nights :)
My favorite things to cook
I love cooking many things. In particular, I love experimenting with versatile dishes like enchiladas, vegetable soups, risottos, and potato dishes until the recipe is my own. I also absolutely love to bake, particularly cookies and bread.
My favorite family cooking traditions
Both of my grandmothers were amazing cooks and I learned a lot from both of them. Holidays were always special in my family. My mother had special dishes for every holiday, for instance Christmas Eve is always an amazing homemade tomato soup and special Norwegian bread.
My cooking triumphs
My favorite cooking triumph was quite a loooong time ago! When I was about 11, I made moussaka for my father's birthday without any help and was so proud of myself when he loved it. Also, I've cooked Thanksgiving all by myself for a few years now and that always feels like a feat to me!
My cooking tragedies
We all have a few! Several years ago, I tried to make chocolate mousse for my (now) husband and it turned out horribly. The funny thing was that despite it, he loved it. He still requests that I make "chocolate soup" and I remind him that it was supposed to be mousse.

Red Velvet Cake III
Thanks for a great recipe! This was very yummy and moist. Very beautiful color too! I used my own cream cheese frosting, added vanilla, and I used the pudding I had on hand which happened to be mini chocolate chip vanilla pudding. I definitely will use this recipe again. I want to experiment with adding a cherry jam layer, or maybe adding chocolate chips to the cake and using chocolate frosting. Definitely would be pretty with fresh raspberries or cherries! Remember to dust pans with cocoa instead of flour.

Evil Cookies
Truly evil! Once people had a bite, they totally understood the name! Very well-received by our group. Perfect as is, but I have switched out the butterscotch chips for flaked coconut from time to time. DH loves the coconut version!

White Chocolate and Cranberry Cookies
Very tasty! I've made these several times with different variations, and they always turn out well. I do add a pinch of salt every time, and sometimes have added oatmeal, almonds, or different types of dried fruit.
