The Best Vegetarian Chili in the World
I almost gave this four stars because I halved the recipe, except the jalapenos, and I didn't think it was that spicy. But it was still really really good. I strained and rinsed all the beans and added a little vegetable broth and some okra. My meat-eating boyfriend loved it.

Spinach Lentil Soup
I made this for dinner tonight, substituting Italian veggie sausage for the kielbasa and veggie broth instead of chicken (we're vegetarians) and this turned out fantastic. It's so rare that I can find a meaty recipe and can convert it but keep it relatively the same. My husband LOVED it! Thanks!

Tomato-Curry Lentil Stew
This was an awesome soup. I added potatoes and the only tomatoes I had were "balsamic vinegar, basil and olive oil". I was a little worried it would clash with the curry powder but it turned out fabulous! I also used vegetable broth instead of water.
