About this Cook
I'm married and I'm a mom of 2. I have an 11 year old, who will try and just about like anything and then there is my 9 year old who won't eat anything but plain, baked, grilled, or fried meat w/ bread and butter on the side. And then there's Eric, my hubby won't can't have anything high in calcium, phosphorus, or potassium, so cooking is quite a challege these days. I have cut out almost all meat from my diet and am working on the dairy. I want to eat things that are farm raised and meat that isn't injected w/ growth homrmones or antibiotics. So looking for recipes that is out of the ordinary, is fun and challenging. It's making me look at what I eat differently now.
My favorite things to cook
I love to bake! I just look at the recipes and want to make them all! I have started finding recipes w/o chocolate, since my hubby can't have it, so it's been fun. I think baking is so much fun, because everyone loves whatever you make and the fact that it is very presentable.
My favorite family cooking traditions
Not so much a tradition but I'm definitely learning how to let the kids help. I want to do everything myself when it comes to the baking, but I also want them to share my passion!
My cooking triumphs
6/08 Marshmellow Fondant! I was so proud of myself. I was very nervous at first, I just let the Fondant sit in the fridge for 3 days after I prepared it but w/ a little push and encouragement from my hubby we did it together and it came out great.

Best Brownies
This is the first time I've made brownies from scratch and I will NEVER buy boxed brownies again. NO joke. I also made the icing/frosting and it was more than amazing and didn't last very long. Next time I make these I will definitely double the recipe! This one's a keeper.

Eclair Cake
What a great dessert! Followed ingredients, although I used 1 box of fat free/sugar free box of vanilla pudding mix. I also used another reviwers recipe for the chocolate frosting. Overall an quick and easy dessert, very cost effective as well.

Sweet Marie Bars
What a nice treat! This was a very quick and simple recipe. I found the icing hard to smooth out but I used my majic bullet to mix together and it came out smooth. The only problem I had was that I did not solidify, still was pretty runny even after it sat for over an hour. I also tasted the butter heavily, next time I make them I will use 1/2 the butter called for. Overall, easy and tastey snack.
