Chicken Tetrazzini IV
This recipe is only okay. I'm not a chicken tetrazzini purist, but I much prefer the "Easy Chicken Tetrazzini" recipe by Marian Collins. It's easier, doesn't require as many ingredients, and just has a better taste--uses cream of chicken soup as part of the sauce. I'm not fond of the sherry in this recipe, it needs more salt, and just something isn't satisfying about the flavor. We'll eat it and enjoy it, but I won't make it again.

Gazpacho
A great base recipe! I made a few changes to suit my taste and needs. 3 cups V-8, 1/2 of a small onion and pepper, used 2 cloves garlic, subbed balsamic vinegar for red wine, omitted tarragon, used fresh basil, and subbed cilantro for parsley. Also added a tsp sea salt. Perfecto!

Buttermilk Chocolate Bread
This was so amazing! I used only 1/2 the margarine, and subbed the rest with applesauce. Also I added a cup of chocolate chips. It turned out perfectly rich, moist, and delicious. It was gone in two days at our house!!! I did not like the honey butter though, and I definitely don't think it needs it, especially if you add the chocolate chips. This is definitely a keeper!
