My cooking tragedies
One of the first dishes I ever cooked turned out grey. That's when I learned brown mushrooms should never be used in a cream sauce. It was at that point that I learned to start paying attention to recipes.

E-Z Chicken Tortilla Bake
Actually a pretty decent recipe, and so easy I don't care if it's not gourmet. I've also made this successfully with leftover cooked rice instead of the tortillas, which makes this a great follow-up to a roasted chicken, rice and veggie dinner. Also lends itself to throwing in diced fresh veggies to add some nutrition. My husband called it "grubbin'".

Lobster Tails Steamed in Beer
Nice recipe, very simple. I made it twice with two kinds of beer, and found the Red Stripe version to be very tasty. One note: the recipe doesn't specify a size of lobster tail. I had to steam my lobster tails quite a bit longer than the recipe states in order to ensure they were cooked.

Coconut Curry Tofu
Very tasty. Freezing the firm tofu before using it is key to the texture of the tofu in this one. I halved the amount of curry paste as that stuff can be volcanic (especially the red stuff) so be careful if you don't like spicy food. Otherwise a quick, delicious meal.
