Beef Bourguignonne

Very good. My wife and I both enjoyed this. I used Shiraz wine, a different brand of beef broth, and Herbes de Provence instead of the parsley and thyme, and the end result was very tasty over orzo. Would make this again.

Slow Cooker Pepper Steak

I left this on low for 10 hours, adding cut up green and red peppers 3 hrs before serving (next time, I'd cut that down to about 1-1/2 hrs). The salt amounts seemed high for me, so I halved the amount of soy sauce, and omitted the extra tsp salt. I served this over brown rice, and topped it with a sprinkling of dry roasted peanuts. Everyone liked this.

Spicy Turkey Stir-Fry

A good way to use up the leftover Thanksgiving turkey. The "spicy" is in the cayenne pepper, but with only 1/8 tsp, it was quite mild. If you want a noticeable heat, you'll need to bump up the cayenne and/or add some drops of hot sauce.

Yummy Pumpkin Pie

I made this no-bake recipe as is, and thought it was very good. I made the pumpkin puree from a small "pie pumpkin", which actually made enough for two pies. Our local grocery chain store does not carry a dry "egg custard mix", so I had to go to a specialty store, where I found a 72-gram package of "Pearce Duff's® Instant Mix Custard". This did the trick. Yes, this pie is on the sweet side.

Pumpkin Pie Spice I

Just like other combinations often called for in recipes like Seasoned salt, Italian seasoning, Fajita seasoning, Herbes de Provence etc., this is a great way to use spices and herbs you likely already have on hand, and save time and money !

Broccoli Chicken Fettuccini Alfredo

Easy to put together and tasty. I too sauteed a minced clove of garlic with the chicken, and used 1/4 cup of Coffee Cream (Half-and-Half in the US) and 1/4 cup milk for a bit thicker & richer sauce. For 4 servings however, I would definitely consider doubling the sauce ingredients.

Chicken with Garlic, Basil, and Parsley

Very easy to put together, and got the "thumbs up" at dinner. My cloves of garlic were fairly large, so I cut back to only 3. I used a total of about 4 tbsp chopped fresh parsley instead of dried, and drizzled a little olive oil over the chicken and tomato slices before putting it in the oven. Basil pesto would go well with this, either as a side or on top.

World's Best Lasagna

Made two of these for a family gathering of 10 people, and got the thumbs up from everyone. No real changes, though the first time I made this, I cut back on the extra salt because there`s plenty between the crushed tomatoes, tomato sauce, sausage, and the three cheeses. The second time I made this, I didn't add any salt at all, and nobody added any. Delicious !

Cornbread Pancakes

Great cornmeal flavour. I didn't have buttermilk, so I used 2% milk, and I only used 1 tbsp sugar as there is plenty if you're topping it with real maple syrup. I'd probably add a bit of vanilla next time. This recipe made about eight 6-inch pancakes.

Grilled Pork Chops with Fresh Nectarine Salsa

I liked this salsa, exactly as written, but only gave it 4 stars because the three others in my family did not (apparently they don't care for cilantro). But, I enjoyed it, and would make it again for a large gathering. I think you could easily substitute peaches for the nectarines, if preferred.

Chicken In Basil Cream

Really like this sauce, but it doesn't make enough ! There's barely enough for four breasts. Consider doubling the amount of sauce, especially if you're planning to serve this with pasta. I took others' advice, and used white wine (Riesling) instead of the chicken broth, and used 1/2 red pepper, thinly sliced, instead of the pimento pepper. Delicious !

Fresh Tomato Basil Sauce

Very tasty. I only had five tomatoes on hand, so I used a 28 oz can of crushed tomatoes to make up the difference. I used the fresh basil called for, but also added a tsp each of rosemary, oregano, and thyme.

Banana Crumb Muffins

Great tasting muffin ! I contemplated adding the additional cinnamon, nutmeg and vanilla that others have suggested, but decided not to. Made it exactly as indicated, and they were delicious. Baked without liner papers for 20 min., and they were perfect. Nice peak to them, and a nice crunchy topping. Will definitely make again.

Home-Fried Potatoes

Very good. I used half red and half green pepper for colour, substituted some fresh cilantro for the parsley, and added 5-6 drops of hot sauce for kick, but otherwise followed the recipe. Will definitely make this again.

Fluffy Whole Wheat Biscuits

I followed the recipe as written, but found the dough very sticky. It took almost another cup of flour to get it to the point where it could be rolled. The resulting biscuits were good, but dense, not fluffy. Will give them another try, though, and maybe up my rating if I get better results.

Chicken-Fried Chops

The whole family enjoyed these. The only changes I made were that I browned the chops in olive oil, substituted red wine for the water, added 2 tbsp of finely chopped onion, and added some sliced mushrooms. 6 hours on Low, and the chops were moist and came apart easily with a fork. Served on a bed of brown rice with some veggies on the side, this made a nice supper. The gravy is delicious, though you may want to season it a bit with a little pepper.

Molasses Marinade for Beef

A thick and tasty marinade. I followed the recipe, but quartered the onion rings. I only had three steaks to grill on the BBQ, so I could have just halved the recipe, and there would have been enough. Will definitely make again.
