Shredded Brussels Sprouts

Pecan-Crusted Pork with Pumpkin Butter

Nice fall dinner. I used store bought pumpkin butter (Trader Joe's makes a good one) and will cut the bread crumbs/pecan mixture in half next time as I had alot leftover. Served with Shredded Brussels Sprouts and leftover sweet potatoes.

Quick and Almost-Professional Buttercream Icing

Harvest Rice Dish

Very pretty dish!! I reduced the amount of onion as I think three would have been way too much. Hubby thought the almonds were a little overpowering so I'll cut those to half next time, or eliminate them altogether.

Halloween Bloody Baked Rats

Five stars for presentation! I used my own meatloaf recipe and halved the "blood" sauce. Also used cooked asparagus for tails, almond slivers for ears, and tiny bits of raisin for the eyes. Hubby suggested adding a cooked spaghetti noodle to the cheese inside to look like guts. ;D Great Halloween dinner!

Halloween Brain Dip

Feta Cheese and Bacon Stuffed Breasts

We found this to be a little bland for our tastes. The bacon and feta combo was good but hubby and I agreed the chicken itself really needed something. If I make this again, I will either layer the bacon and feta over the top or include some type of sauce.

Black Magic Cake

Very good cake with nice dark presentation for Halloween. I forgot to add the vanilla extract but we don't miss it. I decorated this cake with black icing dripping off the top, a sparkly gel spider web, and a big black gum paste spider. Hubby and I both agreed that we prefer this cake chilled.

Pizza Without the Red Sauce

I made this tonight and hubby and I agreed that it is very good as we enjoy Mediterranean flavors. I did not have sun-dried tomato pesto, so I subbed sun-dried tomato bruschetta instead and it was fine. I didn't measure the onions, spinach, tomatoes, jalapano, or cheese - just spread everything around until it looked right. ;)

Butternut Squash Soup

The reviews were unanimous: waaaay too thick! I used the full 2 blocks of cream cheese and it was overkill. My son actually compared this *soup* to mashed potatoes! That said, hubby and I agreed that it may be worth trying again with a whole lot less cream cheese and maybe a little extra spice.

Roasted Beets and Sauteed Beet Greens

This was my first time ever cooking fresh beets and they were pretty good! Hubby liked the greens; I thought they were okay. We ate the beets plain because we just didn't feel like butter or seasoning was necessary.

Carne Guisada II

Very good. I did coat the meat with flour, season with salt, pepper, and garlic, and brown in a bit of olive oil prior to adding to the Crock Pot. Cooked all day (about 8 hrs.) and was incredibly tender and flavorful. Served over rice.

Iced Pumpkin Cookies

Moist cookies that were a hit with everyone. Without the icing, the cookies are a little bland though so I highly recommend not skipping that step. If I make these again, I would add more cinnamon, nutmeg, and cloves.
