Mexican Bean and Rice Salad

I think this salad is SO great. You can add or subtract items based on your pantry and it will always work. Like I was out of corn one day! If you had the wonderful opportunity to have Galllo Y pinto in costa rica for Breakfast, it is very similar to this dish. If you have any left overs try it with scrambled eggs in the morning!

Flatlander Chili

AMAZING! You can really play around with the tomato base. I used what I had - a big can of paste, a 29 oz can of sauce and 1 15 oz can of diced. Really good! My husband requested it for his birthday so I served it in bread bowls with all the fixings. Cheddar cheese, sour cream, diced red onions, cilantro and pickled jalapenos!

Rainbow Stir-fry

The only recipe I could find using a purple cauliflower! I used purple cabbage instead of green and added 1 tablespoon of hot chili sauce and 1 tablespoon of black bean garlic sauce. It added some much needed heat. Really good!

Best Ziti Ever

This dish definitely gets five stars for taste! Remember though that it takes MANY dirty pans and dishes (ie pasta, sauce, saute- three different pans) to make this. BUT - it could be done well in advance and then popped in the over since everything is cooked already and you are just reheating.

Tomato Gorgonzola Soup

Best tomato soup! The color of the soup was a non issue, especially when you know that it is a creamy tomato. Don't be afraid of the Gorgonzola, it is not prominent and just adds depth. This soup was MUCH better than the ready made Tuscan tomato soup from Safeway.

Half-Time Nibblin' Dijon-Ranch Chicken Wings

Way better than expected! I added the 3 1/2 cups cooked rice to the slow cooker in the end and the consistency was perfect. 4 hours on high . Loved the heat!!

Artichoke and Sun-dried Tomato Chicken

It was great because I followed another reviewers' suggestions. I also did not have the pesto so I used the dried basil, sun dried tomatoes in oil and the grated romano. I also served it over whole wheat pasta and it was really tasty.

We would definitely make this again. Make sure to give this all the time the recipe calls for because it needs it! The jelly has to melt to give the awesome sweetness that makes this dish.

Turkey Shepherd's Pie

Great recipe! I also used left over mashed potatoes and a bag of frozen mixed veggies. I also added the chicken bullion to about 1/2 cup hot water, Worcestershire sauce, and two tablespoons ketchup and I let that simmer together. Cheddar cheese and dotted butter on top of the potatoes is also a yummy addition.

Christmas Breakfast Sausage Casserole

This was so good. I made it for Christmas morning and the whole family decided that it would be our new tradition. I read the reviews and also added one more egg and sauteed onion and red bell pepper. The dried thyme was also a good suggestion. LOVED IT!

Winter Squash Risotto

I couldn't find this brand in my grocer's freezer so I roasted my own butternut squash and added it at the end. Delicious! Could not believe the creamy texture the squash added. Yummy!

Children's Gingerbread House

This recipe was a lot of fun. Make sure you give yourself a few days to get it done. It doesn't pay to rush it. It also helps if you have a second pair of hands. The frosting is definitely as good as glue!

Maria's Stuffed Chicken Breasts

This recipe was great for the whole family. Instead of shredded mozarella, I used the fresh in water. I sliced it and layed it in the chicken breast and put the stuffing on top. Then I put another slice of mozarella on top of the sauced breast. I had enough left over stuffing for three manicotti shells. Delicious.

Slow-Cooker Chicken Tortilla Soup

Delicious! I used one fresh habanero and jalapeno instead of the canned. We love spicy but it wasn't too hot! I also used low salt tortilla chips crumbled on top instead of tortillas with oil. I wish the slow clooker held a double batch!
