Italian Spaghetti Sauce with Meatballs

Reviewed: Oct. 7, 2009
This was pretty good but the sauce itself is very plain. I added 3/4 tsp of italian seasoning, used 1 TB and 1 tsp fresh basil in place of the dried and added 1/2 tsp of red pepper flakes. I was afraid that the meatballs would be dry so I added 1/2 cup of milk to the bread crumbs and let them soak for a minute. They were quite moist this way. This is a great base recipe that you can play around with.

Insanely Amazing Jalapeno Cheese Dip

Really, really, really good! I did use half mayo and half sour cream and I used the light variety of each. I baked it in a dish instead of a bread bowl but would love to try the bread bowl next time. Delicious!!

Turkey Breast with Gravy

Reviewed: Sep. 30, 2009
Crazy good! I thought my husband was going to lick his plate to finish off the last drops of gravy. He asked me to roast a turkey breast last night and all of the turkey breasts at the store were frozen solid. So, I used a 5 lb whole fryer chicken. I cut the rub in half due to the small chicken. I rubbed the chicken with a little bit of olive oil prior to adding the rub and I did put a slit over each side of the breast and put a pat of butter inside. I used a can of chicken broth instead of water and bouillon although I don't think that makes any big difference. Finally, I thickened the gravy with 2 TB of flour whisked into a cup of milk. Don't mess with the herbs/spices - they are perfect!! I can't wait to try this with turkey and I can tell you that this will be on my table come Thanksgiving!!

Italian Chicken with Garlic and Lemon

Reviewed: Sep. 1, 2009
This is very, very good and so easy to make. I use skinless, boneless chicken breasts and do not fry the potatoes. I simply cook them down in with the chicken and these two changes cut WAY down on the fat content.

This is very good. I usually double the garlic and omit the tomato and it's quite tasty that way.

Unbelievable Chicken

So delicious! The ingredients sound kind of strange but it works. My 2 year old nephew kept asking for more and we have the worst time getting him to eat chicken (or any kind of healthy protein). This one is a winner!

This is wonderful. My husband and I make it frequently when we don't want to spend a lot going out to our favorite fondue restaurant. Thanks for a great recipe!

White Chili I

Reviewed: May 12, 2009
This was a very good mild white chicken chili. We prefer our chili pretty spicy but this was awesome for when we had guests. I wasn't able to find cannellini beans so I just used white beans. Very good!

Marinated Pork Tenderloin

Reviewed: May 12, 2009
This was very good. I would give it 5 stars but I did cut the cinnamon in half, otherwise I think it might have been overpowering. I cut my tenderloin into small chunks so that I could grill it without drying it out too much before it was done. My husband is pretty picky and he commented on how tender the meat was. Thanks for a good one!

This was okay. I have stolen the "pats of butter under the skin" bit from this recipe and combined it with the "Perfect Turkey" recipe. We really prefer our turkey brined - it just makes it so juicy.

Boilermaker Tailgate Chili

Really excellent. My husband, being a Purdue alum, was really intrigued when I told him the name :) This is the only way we eat beef chili now. It is so worth the extra effort. Allow it to simmer for several hours, per instructions. It really allows the flavors to combine.

Perfect Turkey

Reviewed: Apr. 8, 2009
So delicious. One of my guests for T-day dinner ate 4 servings! I did change one thing that I think made my turkey breast extra juicy. Instead of melting the butter I cut it into about 1/4 inch slices. I cut small slits into the turkey skin on the breast and inserted a slice of butter into each. This really kept the breast very moist while it cooked. This is my new go-to turkey recipes. Thanks!
