Downeast Maine Pumpkin Bread
I made this and like some other reviewers before suggested, I swapped out 1 cup of sugar for brown sugar and 1/2 cup of veg oil for applesauce. I also added the teaspoon of Vanilla extract. Making total, 2 cups white sugar, 1 cup brown sugar and 1/2 cup VO and 1/2 cup applesauce. This made the bread not too sweet, which my husband really liked and the bread was very moist! I thought this was a quick and easy bread to make. I ended up with two loafs because mine were larger than the ones in the recipe. We ate the first loaf in 1 day between the two of us! I put the second loaf in the freezer for another time!
