Buffalo Chicken Fingers
Very good, I used chicken tenderloins so I didn't have to cut anything. I added some hot sauce in with the egg mixture for some added kick. They still weren't very spicy, next time I'll add more.

Texas Chicken Quesadillas
Yum-O! Glad I've found another "something different" recipe to add to the rotation. I added some bacon I had on hand that I crumbled up, and used the stove top instead of baking them. I used Sweet Baby Ray's Sweet & Spicy too (like another reviewer suggested) and highly recommend that brand of sauce.

Potato Salmon Patties
I hated Salmon Patties growing up, my Mother would just add onions and saltines - YUCK! But now having made this recipe twice I feel like I've found the BEST way to take a can of Salmon and turn it into something that is actually quite tasty and comforting to eat. Changes I made were simply in adding a few more ingredients, being two jalapenos that I minced with the onion and garlic (actually in my food processor), some Old Bay seasoning, splash of fresh lemon juice, 1/8 cup of cheese, which was an Italian Blend as that was what I had. I left out the dill though. And since I burn everything I try to fry, I opted to broil them, 8 minutes on each side. More healthy and they weren't greasy. I served these patties on a toasted wheat bun with mayo, mustard and tomato. Yum-O!
