Mango and Goat Cheese Delight
I couldn't find watercress so I used slices of cucumber instead. The goat cheese is challenging to work with, it helps to put it in the freezer for a little bit before slicing. Turned out really well and very delicious.

Macadamia-Crusted Sea Bass with Mango Cream Sauce
Used Halibut steaks instead, very tasty, and a wonderful mixture of flavours.

Tomato Chicken Parmesan
I didn't like the tomato sauce I used but next time I'll use a better brand. I thought the chicken was fabulous, and it was all delicious.
