Spicy Sausage and Rice Casserole
This was very good, family loved it. But, like others, I cooked completely on stove top using a dutch oven. Mixed everything in after browning the sausage, covered, and simmered for about 30 minutes. Turned out great!

Lemon Pie Bars
Just made these, and I was a little apprehensive since it was a true "from scratch" recipe, crust and all, but it was amazingly simple and the bars taste great! Some people have commented that they aren't lemony enough. I think they have quite a bit of tartness to them, I squeezed lemons to get the juice and I used the zest as called for. Wondering if some might be using bottled juice and/or skipping the zest and maybe that is affecting the tartness? Anyway, worth the effort.

Super-Delicious Zuppa Toscana
Hubby and I love this soup - we think it is better than the one found at the chain restaurant, mainly because this one is thicker and richer. Only change is I use fresh kale instead of spinach most of the time (less expensive). Enjoy!
