Big Soft Ginger Cookies
Really loved these - only complaint is that the next day, the cookies were so soft they fell apart.

Easy Risotto-Style Rice
Simple and tasty - I didn't have broth, so I used chicken bouillon. Great change from the usual plain rice!

Baked Salmon with Herbs
A few too many bread crumbs in ratio to the fish, but tasty. Next time I'll cut the recipe for the coating back even more.
