Peanut Butter Bars I

These are amazing! I made about 8 desserts for Thanksgiving and these were the first to go. I put the peanut butter mixture in the dish and put it in the freezer while I melted the chocolate and it seemed to work perfectly.

I loved these!! Everyone at my bunko party really loved these. They are spicy which I love, and the cheese really makes it, but it does ooze out while in the oven.

Spicy Tortilla Roll-Ups

These were really good. I couldn't find pimentos that day, so I bought some jarred whole roasted red peppers, and it turned out to be for the best, they gave it such a wonderful favor.

These are good but super sweet and just a lot of cookie to eat. I have too many leftover to think they were very succesful with my family, as sweets never last more than a day.

Kickin' Collard Greens

These we amazing! So delish. An hour is sufficient but the longer you cook these the better. I just used left over bacon grease, which I always keep around and I used a few tablespoons. I too added a bit of brown sugar which I think did a great job of balancing the greasiness and the spice from the red pepper flakes, all the flavors worked perfectly together.

Shepherd's Pie

Really yummy easy weeknight meal. Though the ketchup sounded weird but added it anyway and it was fine. Used mixed veggies with peas, carrots, and green beans. Also made homemade garlic mashed potatoes (just boiled the garlic with the potatoes and drain and beat when soft). This was yummy and fast.

My dad made these after I found him the recipe and they were delish...wouldn't change a thing. We did it without a bread machine the way another user explained how to do, and it worked out great.

Beef Stroganoff III

Yummy! I really enjoyed this, and the only thing that I changed was adding some fresh garlic, with the onions in the beginning, and I used fresh mushrooms, because I think thats always a better idea, but because of that I added them in about 10 minutes before serving because obviously it took them longer to cook. It was praised by my dad and his football buddies!

Mouth-Watering Stuffed Mushrooms

Awesome, extremely tasty! To make the stuffing easier and more even, first I whipped the cream cheese with my mixer, to make it creamier, then I added the cooled garlic mixture to it, again with the mixer to smooth it out. then I put the mixture in a piping bag, and stuffed them that way, so they turned out tasty and pretty!

Cream Corn Like No Other

Pecan Pie V

This recipes is amazing. I usually can only eat a tiny bit of pecan pie because it is TOO sweet, this one is absolutely perfect and you taste the pecans not just the overwhelming sweetness you get with a syrup pie. Everyone in my family repeatedly told me it was the best pecan pie they had ever had.

Fresh Herbed Halibut

I would give it a five because it was AMAZING, but not as written. 1 cup of olive oil?? That's GOT to be a mis print, because that is just crazy. Used about 3 tbsps of olive oil, a little extra dill, and fresh garlic instead of powder, got amazing fish from costco, not frozen so that made it better, but it was SO SO awesome. Yummy!

Mexican Style Shredded Pork

This was delish!! I did change it quite a bit to fit our tastes, but I'm sure it was great as written too. I used frozen green chiles (canned one I find to be too mushy), cooked the pork in the slow cooker WITH the lime juice, no rice. Omitted chipotle sauce I liked the simple clean citrus flavor. Cooked on low for 8 hours. Awesome, have plenty of leftovers and my hubbikins is THRILLED about that.

Ratatouille

Pretty good. Needs more flavor, like garlic on more then just the egg plant. Should have doubled the cheese, and tossed all veggies in olive oil, will do next time, because it was good enough to make again, just not as written.

Spinach-Stuffed Salmon Fillets

This was amazing. My boyfriend is still talking about it!!! I made some modifications but same basic concept. Cooked the spinach a bit before hand, just to make sure it wasn't too crunchy. Toasted the pine nuts and instead of sun dried tomatoes AND pesto, I just used a sun dried tomato pesto. Also put a bit of olive oil on top, and when it was done cooking squeezed some fresh lemon juice on top, I think when you are cooking a fatty fish like salmon a little acid is always a good thing. But like I said before, this was awesome!
