About this Cook
I was a University Professor, I am now disabled and retired. I homebrew Mead and some beers - Porters, IPA's, Old Ales, and Strong Ales. I have been 17 years old all of my life - only my body has aged.

I prefer simple dishes loaded with vegetables.
My favorite family cooking traditions
When I traveled for clients, I always ate regional cuisine. For the record: The English have no cusine. Barbecue in North Carolina, fresh Lobster in Maine, fresh Crabs in Maryland, Catfish in St. Louis, Shrimp in Alabama, anything Cajun in Louisiana, and Chicken Fried Steak in Texas are my favorites.

When my wife says 'very good', that's triumph enough for me.

Hariton's 'Famous' Vegetarian Casserole
I am definitely going to make this recipe. My only problem is downsizing it to a meal for two or four people. Downsizing option does not adjust the cooking time. I may omit the eggplant to save prep time I was surprised by the negative comments since this is a very basic recipe.
