Chicken Pot Pie IX

This is quite simple, and tasty. I bought two frozen pie crusts as a shortcut, made some sodium free boullion to reduce the salt, used frozen carrots and peas, and added some frozen hash brown potatoes. It was great. We ate the leftovers the next two days... and enjoyed them!

Home-Style Brown Rice Pilaf

This dish was an excellent accompaniment to the chicken I prepared. The flavors were so well blended that the pilaf overshadowed the chicken! This dish would be a meal in itself if you added finely chopped cooked chicken.

These cookies are precious! The dough has a very mild flavor, and the eggs make them a showstopper. Next time I might experiment and add butter flavor instead (to the dough).

Baked Honey Mustard Chicken

This recipe is quite good. I made it tonight with a few changes...as per the advice of some other reviewers, I omitted the basil. The mustard I used was quite strong, so I cut the amount in half, but I think I will use the full amount next time. I allowed the chicken to marinate for about an hour, and it came out tender and juicey. Also, I added an egg and some mayo to the mustard/honey mix to help combat the runny-ness problem that others complained about. It helped. I would definately make this again.

Apple Stuffed Chicken Breast

My son made this for us for dinner last night and it was quite good. He used Gala apples, and the flavor was delicate. I would be curious to try this one with a tart apple, just to add some kick to the flavor. Also, I think I might try it with a smoked cheddar. Definately will try this one again.

Pastitsio III

This is "soul food". The spices make it interesting, and even my fussy son enjoyed it. It was still great as leftovers! If you are in a pinch you can substitute the fresh tomatoes with well drained canned.
