What an easy, excellent recipe! No more standing around watching the fudge boil to the soft ball stage, no more gritty fudge. This was perfect and smooth. Although, the title of the recipe is misleading. I was searching for a peanut butter fudge recipe, and this one popped up. This is more of a chocolate fudge recipe with some peanut butter in it. Husband had his heart set on peanut butter fudge, but I sure enjoyed it. I'll make a whole lot more at Christmas for friends and family.

This casserole turned out better than I had hoped. My husband's pretty picky and he loved it. I followed the advice of some of the reviewers who soaked the tortillas in the enchilada sauce. It was even better the next day. The tortillas had softened and the taste was similar to a tamale. Have added this recipe to my recipe book and will make it again.

This is one of the easiest, tastiest "comfort food" recipes I've had since eating Tuna Noodle Casserole as a child. I will definately be preparing this for family dinners.
