Chunky Pecan Bars

Very rich & yummy. Made them for a party & got great reviews. Chill before cutting so they don't break apart, and then cut them small...they are very rich & chocolate-y! I mentioned that I might cut down on the chocolate the next time, and all the guests cried out "NO!!"...so I guess I won't. :) Helpful note...I didn't have dark corn syrup, but I found the following substitution for it online...1 c white sugar + 1/4 c water + 1/4 c molasses....and then I just used 3/4 c of that mixture.

Apple-Filled Cranberry Muffins

These are SO yummy! I used apple sauce instead of the cranberry juice, and so the batter was VERY thick, but they turned out delish! Next time, however, I might just mix the apples into the batter, instead of using it as a "filling". I made a few in ramekins, and they made excellent individually-sized dessert cakes...warm up & serve with ice cream - YUM!

Raspberry Peach Crumble

I was really looking forward to making this recipe, but was a little disappointed. Too much butter! And maybe my ramekins are smaller than others...but the filling ran out all over the sides & onto the pan. Very soupy...would cut out the juice and some of the sugar in the fruit. And cut down on the butter. Next time, I'll probably make it in a large pan, instead of the ramekins.

Julia's Easy Slow Cooker Chicken

AWESOME!! I just made this tonight, and LUV LUV LUVED it! I didn't have any potatoes in the house, and forgot the cornstarch, but made it anyway. Put it over some barley, and YUM! SO easy too!

Mixed Fruit Crisp

Didn't care for this recipe. I LOVE fruit crisps, but the banana flavors just did not work. I also would not recommend adding the water to the fruit...it made the fruit too soupy after baking. The topping was bland.

Bright Blue Monday Cake

Delicious!! And so simple. I made it in an 8x8 pan, and baked it for 45 mins total. It was perfect! Light, fluffy, delish. My boyfriend is not a dessert fan, but he ate 2 pieces!

Seven Layer Dip

Excellent! Although I made some modifications. In the bean layer, I left out the peppers, and added a 1/4 c. or so of chili sauce, and some extra chili pwdr and cumin. For the guac layer, I used only 2 avacados, which was plenty. I added some chunky salsa to the guac as well. I added a ~1/2 pkg of taco seasoning to the sour cream layer for some color and a kick of flavor. I don't like olives, so I drained a can of black beans and put about 1/2 on top for garnish. Overall, it was a BIG hit and everyone loved the flavors!

Pecan Pie VII

Not bad tasting, but the recipe makes WAY too much filling for the 9" deep dish crust that I bought. It poof-ed up out of the pie, and when it settled, the top was not pretty. The pie also took forever to set! 35 - 40 mins is NOT enough...I left it in over 75 mins, and it was still pretty gooey. Luckily it firmed up after a few hrs. I might try it again with a few changes.

Carrot Cake III

I made this for my dad's birthday, and it was a HUGE HIT! I'd never made carrot cake before, but decided to try other people's modifications with a few of my own: 1) 1 c brown sugar & 1 c white, 2) added extra tsp of vanilla, 3) added 1 c raisins, 4) added 1/4 tsp nutmeg, 5) added 1 extra tsp cinnamon, 6) used 3/4 c applesauce and 1/2 c oil, 7) subst. 1c chopped walnuts. Fabulous & a new family favorite!

Maple Salmon

Very yummy! I made 2x the marinade, and used half of it to marinate the salmon. While we grilled the salmon, I reduced the remaining marinade to a nice sauce. We spooned the sauce over the fish and some rice before serving. Absolutely fabulous!

Health Nut Blueberry Muffins

Everyone loved these! I improvised a lot, based on what I had, and they still came out perfectly. Used wheat germ, flaxseed (which I partially crushed myself), some brown sugar, left out rolled oats, only had skim milk. But the guys at work gobbled them up!

Tortellini Salad I

Very good! I left out some of the things I don't like (olives) or didn't have (mint, feta), used dry seasonings (didn't have fresh parsley), and added more veggies (shredded carrot, broccoli, etc). Served it at a family gathering, and everyone loved it...even the kids who hate all veggies!

Filet Mignon with Rich Balsamic Glaze

Excellent! I grilled the meat, but made up the sauce & drizzled it over after grilling. Amazing flavor! Drizzle it over rice or potatoes as well.

Sea Bass Cuban Style
