Chunky Pecan Bars
Very rich & yummy. Made them for a party & got great reviews. Chill before cutting so they don't break apart, and then cut them small...they are very rich & chocolate-y! I mentioned that I might cut down on the chocolate the next time, and all the guests cried out "NO!!"...so I guess I won't. :) Helpful note...I didn't have dark corn syrup, but I found the following substitution for it online...1 c white sugar + 1/4 c water + 1/4 c molasses....and then I just used 3/4 c of that mixture.

Apple-Filled Cranberry Muffins
These are SO yummy! I used apple sauce instead of the cranberry juice, and so the batter was VERY thick, but they turned out delish! Next time, however, I might just mix the apples into the batter, instead of using it as a "filling". I made a few in ramekins, and they made excellent individually-sized dessert cakes...warm up & serve with ice cream - YUM!

Raspberry Peach Crumble
I was really looking forward to making this recipe, but was a little disappointed. Too much butter! And maybe my ramekins are smaller than others...but the filling ran out all over the sides & onto the pan. Very soupy...would cut out the juice and some of the sugar in the fruit. And cut down on the butter. Next time, I'll probably make it in a large pan, instead of the ramekins.
