Zucchini Brownies
We all really enjoyed these brownies. I didn't do the frosting because I didn't think it needed it. My kids ate them up as did their friends!

D'Amaretti Biscotti
This recipe is yummy! I used white whole wheat flour and they still were great. I think next time I would add a little more almonds and almond extract and maybe a pinch of salt.

Eggplant Au Gratin
I have always been the type to think Eggplant needed to be fried to be yummy, this recipe proved me wrong. This will definitely be made again.
