I love this recipe. I have made this many times just as is. I have also read others reviews and made some changes like adding more cheese or taking the foil off the last 20-15 min and adding breadcrumbs. This last time I incorporated some diced smoked ham and let it bake. It smelled so wonderful and my stomach wouldn't stop growling until I had the first bite! I paired it with some broccoli on the side.

Great recipe. Simple and fast to make. I went with another's suggestion of using a can of "Embassa" salsa. It came out just spicy enough. I used a clove of garlic instead of the measurement listed on the recipe. I garnished with fresh cilantro and fresh chopped onions. I skipped the sour cream but did put a pinch of shredded mexican blend cheese. All in all, it was delicious!
