Apple Dumpling Cake
I love the simplicity of this dessert; served warm with whipped cream, it was a hit. I did decrease the oil to 1/2 cup and added 1/2 cup applesauce instead. I used 4 large Braeburn apples and tossed the slices with flour, sugar and cinnamon. Adding a little cinnamon to the dry ingredients helped too.

Cranberry-Pumpkin Cookies
Yummy! Cake-like but light. I added 1/2 tsp nutmeg and increased recipe by 1/2 which resulted in 52 cookies. Be sure to grease your cookie sheets!

Simple Scones
Great with the following changes: 1 C white flour and 1 C wheat flour, added 1/2 C chopped dried berries, substituted low-fat sour cream, drizzled with a simple glaze frosting.
