Guinness(R) Corned Beef
Wonderful! I added an extra 1/2 bottle of Guinness, 2 bay leaves, crushed peppercorns, mustard seed, celery seed and dry mustard powder. Absolutely delicious! I used a small casserole dish and lid w/out a rack. It barely fit, but I wanted as much of the meat covered in beer. I added potatoes and carrots too! This is our new corned beef recipe..no more boiling! The only change I will make will be to cook it on low in the slow cooker. It was very moist, but not as tender as it would be in a slow cooker.
