Lemon Linguine

I really didn't think that this would have so much flavor! Soo tart and flavorful. I made grilled chicken, cut it up and mixed it in the pasta.

So great great great! I also doubled the sauce. My boyfriend wanted potatoes so I added those and they were a good addition. My pie was verry full though, but 3 guys and me ate it for dinner and lunch the next day.

BBQ Dry Rub

Herbed Grilled Artichokes

Ahhhmazing. I made a dip with mayo, sour cream, lemon, s&p, chili sauce and garlic (aioli dip) to serve with it and was great.

Bud's Potato Salad

The marinade is the key to this recipe. Otherwise I actually used low fat mayo with low fat sour cream which worked perfect. I also added hard boiled egg. it was delish.

Penne with Spicy Vodka Tomato Cream Sauce

This is really really good. I used fat free half n half and it worked just fine, although I'm sure cream would make it more decadent. I also used angel hair for pasta and it was great.

Creamy Rice Pudding

Pretty good. I think too much liquid in recipe, but I also used jasmine rice which may have skewed the measurements. Otherwise, good flavor

Roasted Red Pepper Cream Sauce

I used roasted red peppers from a antipasto bar at the supermarket and threw in a few marinated sundried tomatoes. It was sooo good- not good for you. I added chicken to it to make it a meal. Added a little salt at the dinner table.

Red Raspberry Vinaigrette

This was sooo delish! I added more oil and jam because it was a bit vinegary at first, but then it turned out great. I made it for Valentines day and served it with steak salad with feta

It was too vinegary at first, but I added a couple squirts of honey and about a tablespoon more of brown sugar and it turned out great. Also, I used 1/2 seasoned rice vinegar because it is more mild.

Poblano Corn Chowder

This was so good, but I made changes. I used 2% milk instead of heavy cream and it was PLENTY thick. I used 3 cobs of fresh corn instead of a can, I used half the sugar, used vegetable base instead of lobster base and used shredded rotisserie chicken rather than shrimp. I was the best soup I have ever made and I will definitely make it again.

7-Layer Taco Dip

Made it for superbowl and everyone loved it. Cooked the sausage and taco seasoning together so the seasoning wasn't crunchy and blended in better. I also added a layer of guacamole (i just mashed avacodo, lemon and lime juice, onion, garlic and touch of salsa together- no salt because the first layer is salty enough). Anyway, it was really good and I'll make it again
