Baked Slow Cooker Chicken

Reviewed: Feb. 2, 2011
This is a great way for a busy person to have a delicious dinner ready when they get home. My only concern was using the aluminum foil at the bottom of slow cooker so I gave it 4 stars. I am sure it would leach out aluminum into the meal and that is very dangerous for your body. I only use stainless steel or ceramic in my cookware for this reason. A good idea would be to put all the veggies on the bottom or even use a SS rack to fit under the chicken to keep it from sticking or burning. This chicken dinner was delicious. I added carrots, onions, celery and rutabaga ( it's like a turnip that my mom always added to some chicken dishes) and spiced it up a bit with garlic, poultry seasoning, and S&P. My family loves this. I put it all in a bowl in fridge in the evening and just pop it in the slow cooker in the am and we are good to go! My neighbors can actually smell the flavorful aromas coming from my house before we even arrive home!

Easy Peanut Butter Fudge

Reviewed: Dec. 31, 2010
I was looking for a recipe with the ingredients I had on hand for my "chocolate fix". I made it exactly as given but added walnut pieces at the end of mixing. I used a high speed KitchenAid mixer and mixed for about 4 min. Maybe wasn't necessary to mix so long, but I wanted it to be real creamy and it was. I folded in the walnuts with a wooden spoon. It set up nicely in the fridge after about 4 hours. This recipe is fantastic if you don't have everything on hand such as chocolate chips or marshmallows. I will make it often for me and my family since it is so very easy, tastes terrific, and satisfies my cravings. Thanks for posting it!

Oven Roasted Potatoes

Reviewed: Dec. 2, 2009
These oven roasted potatoes come out perfect for serving to family or guests. I have been making these for years, and my family always asks for them as a side. I skip the dill weed and marjoram since my family prefers it without. I also add fresh, course ground black pepper. I use the minced garlic from a jar (seem to run out of fresh garlic) and top them with a sprinkling of paprika before baking for a nice roasted color. They are so easy to prepare and I always line the cookie sheet with heavy duty foil so clean up is a breeze. These go great as a side dish with any kind of beef, pork, chicken and even fish.

Pumpkin Pie Bread

Reviewed: Nov. 12, 2009
I made this today because I had a can of pumpkin pie mix sitting around and didn't feel like making a pie. I was a little worried about using this instead of puree, but it came out delicious and moist. I cut back on the sugar by a half cup, because the pumpkin mix contained sweet syrup. I didn't have pumpkin pie spice so I just added 1 tsp of cinnamon, ginger, and 1/2 tsp. cloves to the mixture. I also used 1/2 cup applesauce and 1/2 cup oil as some reviewers suggested. I was able to make 12 muffins and 2 nice size loafs from this recipe. The kitchen smelled like a gingerbread pumpkin pie heaven! My family loved them and said they were the best ever! This recipe is a keeper. Thanks for sharing!

Soft Giant Pretzels

Reviewed: Nov. 7, 2009
These soft pretzels were very easy to make with my bread machine. I followed the recipe for the dough and it was quite sticky trying to remove it from my bread machine. Next time I will add about 1/4 cup more flour to the machine. I boiled them in the baking soda bath as directed and they did not fall apart. They tasted a little too sweet for our taste so I will try less brown sugar next time. The outside of the pretzels were a bit "moist" but I will use egg wash instead of melted butter next time. (I followed another review and put the butter and salt on before baking) All in all, these tasted pretty good and are worth saving in my recipe box.

Crunchy Caramel Corn

Reviewed: Aug. 31, 2009
I had to give this recipe 5 stars. I was just looking for something different to make with popcorn and peanuts and I saw this one. I substituted honey for corn syrup (didn't have any)as another reviewer said. Everything else was exactly like the recipe. It came out so yummy, sweet and gooey and crunchy, just how we like it. I really think this recipe beats all the others I have ever tried or bought. It's close to impossible to make a mistake with this one. It was ever so easy too! Thank you Shelly for this wonderful recipe. I am going to make a ton of it for my halloween party this year.

Bread Machine Challah I

Reviewed: Aug. 15, 2009
I like to experiment with different Challah bread recipes and this one remains our family's favorite. Sometimes I set it for the dough cycle, remove it, and let it rise on a floured board, punch it down then braid it and let it rise again. Then I brush on an egg wash and sprinkle with sesame or poppy seeds and bake in oven on a lightly greased cookie sheet for about 30 minutes or until lightly browned. It looks so pretty braided and tastes terrific when spread with butter. When I invite dinner guests, they always ask if I am having that "fantastic braided bread" again! This bread is a classic keeper for sure!

Light Oat Bread

Reviewed: Aug. 3, 2009
I think the reviewers who stated that it didn't rise well or had a too dense texture let the yeast touch a liquid before baking it in the bread machine. My bread machine instructions states never to let the yeast touch any liquid or it will not rise well. (some may argue with this, but I found it to be true.)So I changed the order of ingredients so that the flour was last, before adding the yeast. This is excellent oat bread. I followed others reviews and added honey instead of brown sugar and olive oil instead of margarine, otherwise did not change anything. This bread makes a great toast for breakfast as well as sandwiches. My family asked if I could pack their sandwiches with this so I will be making this bread at least 3x a week.

No Bake Cookies II

Reviewed: Jul. 9, 2009
I had an extreme craving for chocolate and was out of sweets so I thought I would try this recipe since I had what it called for. These were delicious! I read the other reviews first and added less sugar and more cocoa, cooked it for 4 min., but otherwise I followed the recipe. I ate two big spoonfuls even before I put it in the refrigerator and they were scrumptious. The oatmeal made them nice and chewy too. I didn't have any problem with stickiness. They set up nicely on a large plate. After they were cold, my son and I ate a few and we both said, "Yummy, this recipe is a keeper!" Next time I may add some pecans and/or chocolate chips when they are ready to go into the fridge. Thank you Sandy for posting it.

Monkey Bread II

Reviewed: Jun. 27, 2009
This monkey bread was eaten up quickly by my family. They wanted me to make it every weekend! I followed the recipe as it is and all went well, but I would suggest using less than 1 cup of margarine in the brown sugar mixture. Maybe even 1/2 cup. The margarine seemed to float on top of the brown sugar mixture and I had to keep mixing it so that the ball I put in would get covered by the brown sugar too. Besides that, it turned out great and I was pleased with it.

Cream Cheese Frosting II

Reviewed: Mar. 22, 2009
Yummy! I followed others suggestions and used 1/2 the cream cheese and 1/4 C. butter. I also added 2 tsp. vanilla and made sure that I sifted the powdered and added it slowly to prevent lumps. I used it to frost a lemon cake and sprinkled lemon zest on the top for pizzaz. I brought it to a family event and everyone raved about the frosting. Not too sweet and the cream cheese was not overpowering. This is a keeper for sure. Thanks for the recipe.

Shelby's Nutty Putty

Reviewed: Mar. 15, 2009
I made this for my grandkids recently and they loved the taste as well as shaping things with it. They were shocked that they were allowed to eat it too! I scaled the recipe down to 5 servings which was plenty for the 3 of them to "test" it out. Although some of the ingredients are very sweet, there is also peanut butter and milk which adds to their protein intake. I agree, it is a wonderful idea to help younger hands develop better small motor skills and have fun at the same time! Their little hands got somewhat sticky from playing and eating this, but they didn't mind washing up when they were done. This recipe is a Great idea!

Banana Banana Bread

Reviewed: Nov. 29, 2007
I tried this recipe because my son had about 12 ripe bananas that he was going to throw out and I didn't want to waste them. I made a double batch using all the bananas and added vanilla, cinnamon and nutmeg as others suggested. I made 1 loaf and 12 muffins with it. (I wish I would have had nuts on hand to add as well) The loaf took 90 minutes! to bake, and the muffins did well with 30 min. This is a good, very basic recipe for banana bread, but I would have preferred it a little sweeter. Next try I will make 2 small loafs instead of one, and also add nuts and a sweetener like sugar or honey. I did like the heavier consistancy and it went great with my morning coffee. I will make it again since it was so easy!

Poor Man's Pepper Steak

Reviewed: Oct. 31, 2007
We loved it! I don't know why a couple of others didn't see the 2 cups of water in the ingredients. (Maybe the contributor added it later??) I also browned the cube steaks in the same pan after I removed the peppers, garlic, and onions. I also added beef bullion to the water and poured it over the whole thing. It is a great way to make cube steaks! I served it with mashed potatos and a side dish of yellow squash. I might try a pressure cooker next time to get it done quicker.

Dog Biscuits II

Reviewed: Jul. 14, 2007
I have made this recipe 5 times already and my dogs gobble these right up! I substituted chicken thighs(took off the skin), lean ground beef, and liver for the pork. I love that my two spoiled dogs are getting carrots, eggs, milk and whole wheat in these biscuits! I actually have fun creating different shapes with my cookie cutters too! I also give these away as gifts for my family and friends with dogs. I put about 6 in a zip lock bag and enclose the directions, and tie up with a cute bow. Now, all my friends are making this recipe! I will be making more batches for the freezer as well. These are very healthy and with NO preservatives! Thank you for submitting this healthy, doggie delicious recipe.

Bread Machine Bagels

Reviewed: Jun. 3, 2007
I just made these today and they are fantastic! I followed the advice on the reviews regarding the 1/4 - 1/2 cup extra water and letting them rise for 30 min. instead of 10. I made 6 large ones instead of 9. I need to learn how to shape them better. I made parmesan bagels and brushed olive oil over the tops. I added 1/2 cup shredded Parmesan to the bread machine and I also topped them with Parmesan before baking. I baked them for 30 min. They were perfect! Very chewy inside and crispy outside. Thank you for submitting this great recipe. I will be making double batches from now on.

Banana Bread VIII

Reviewed: Sep. 3, 2006
I had to give this 5 stars! It was very moist and very versatile for adding almost any other ingredients. I added vanilla and used plain yogurt for shortening and it was delicious! The crust was a little darker than expected, and yet was just as moist as the rest of the loaf. It was easy to make as well. Thank you for offering it!
