Chantal's New York Cheesecake
This is amazing, every time I make it. I do shut the oven off after its done baking, and let the cheesecake sit in it overnight. However,I would be careful to remove the foil-wrapped spring form pan from the waterbath when you are letting it cool, as water can eventually seep into the bottom of the springform pan.
