Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

YUM! I now call these my evil cupcakes! You can't stop eating them. I did the yellow cake mix and chocolate frosting. They were a huge thanksgiving hit, not just with the kids but the adults too!

Margarita Grilled Shrimp

This was really good! I sauteed it on the stovetop though...too hot to fire up the grill today. I made it exactly as the recipe states. I might spice it up a little next time and I definately want to try it on the grill! A great summer, light meal!

Cheesecake Brownies

Sinful! I made these in a 9 inch springform pan, and they turned out beautifully! I also followed the tips on the filling that wifey suggested. Instead of just layering the cheesecake mixture on top, I saved a portion of the brownie to swirl through on top as well. Pretty enough for company, but comforting and easy enough to whip up for the family!

Zesty Slow Cooker Chicken Barbecue

I cut this recipe down, used 2 LARGE chicken breasts. I was afraid of it being watery, so I cut the liquid down to what I thought it could safely cook in. Cooked on high for 3-4 hours, then shredded and returned it to the crock. I let it cook awhile longer and then added more sauce as needed. I will make this again! Like others said...use a good sauce, it makes all the difference.

Delicious Ham and Potato Soup

This was great! I did make a somewhat significant change though. Instead of the water and chicken bouillon, I used ham broth. I had cooked a ham and saved the juices that cooked out of it. I skimmed the fat off it and used it in place of 2 cups of the water and added about 3/4 of a cup of water. I reduced the liquid because I wanted a thick soup. Also, instead of celerey, I used celery salt. THis was an excellent RICH soup with a yummy ham flavor (largely due to the broth, I think). We topped it with shredded cheese. Next time, I'll add some bacon to it and I think it will be even better!

Chicken Enchiladas V

These were ok for me, but nothing special. I did make them with corn tortillas instead of flour, but that was the only change I made. They need something to take the cream of soup taste out, because unfortunately, that was the dominant flavor. Maybe more spices would have helped.

Fresh Apple Cake III

This is really good. I made it as a 9x13 and i think i could have cooked it a little longer because the middle was just a touch doughy. I added some cinnamon and it definately helped. This tastes to be almost like an apple blondie. I will make it again!

Slow Cooker Chicken and Dumplings

I made this recipe very nervously because I always make homemade dumplings and have dislike other versions in the past. And this of course was not as good as homemade for me. But it does work well when I don't have time to do the homemade thing and had good flavor. Bonus points for using the crock pot. the chicken was just right. I only used 1 can of biscuits and that was plenty.

Whit's Chicken Enchiladas

I had such high hopes for this one! This was the driest enchilada i've ever eaten. The only change I made was to ADD 2 jalapenos and 1 bell pepper. Still, this was bland and had little flavor. If I do try this again (and it's a big IF) I will add enchilada sauce to the cream to help the dryness and lots of seasoning to the filling. Perhaps chili powder, cumin, and salt.

YUM YUM YUM! i left out the milk and used low-fat cream cheese. it also only filled 1 pie crust but that was fine because i only wanted 1 pie! Maybe that was due to leaving out the milk and using lowfat cream cheese?

Southern Peach Cobbler

This is really good and exactly what my husband was wanting. I prefer pie crust cobblers, but hubby likes his peach cobblers like this. It is quick and simple to make. I made it with peaches we canned at home so it was especially yummy. I think I would add a touch of cinnamon next time for another flavor. Definately a keeper!

Taco Lasagna

Yummy! This was very good and easy. I halved the recipe but still could have used a whole jar of salsa because it just didn't seem like I had enough. I added diced tomatoes and chilis to the salsa. I also added 1 small onion and chopped bell pepper to the meat. Like another review, I mixed the sour cream with the meat mixture because I hate trying to spread out sour cream. Overall this was good. I'll probably make it a once a month addition to my meal plans.

Garlic Cheddar Chicken

YUM! I loved this! I only had colby/jack cheese but it still turned out great! It was a little time consuming but only because I had to make my own breadcrumbs. I added a little bit of crushed red pepper flakes for some heat and this was a good addition. Definately put under the broiler for the last few minutes to get the crunch. It is tender and juicy and just plain yummy!

Slow Cooker Enchiladas

I made some major adjustments due to the complaints everyone had about it being soggy. I kept the tortilla count the same but halved the soup portion of the recipe. It didn't turn out soggy which was good. I added green bell peppers, onion, and minced jalepeno to it as well. However, it still had a slightly "cream of..." soup taste to it. I will try it again, it just needs more tweaking.

Country White Bread

I made this today and it is WONDERFUL! Everything homemade bread should be. Dense, but not heavy and wonderful flavor. I only mad half the recipe because I only had one package of yeast and I didn't have loaf pans so I made it into round loaf and it turned out beautifully. Golden brown and rustic looking!

Chili Cheese Snacks

This got rave reviews from my family! I used jalepeno peppers instead of chiles and they still could have used a little more heat (my fam likes it hot!). I left out the olives, personal preference. I will make these often as they are delicious, quick, and make people go YUM!

King Ranch Chicken Casserole I

This recipe has potential and I will try it again, but as is, for me, it didn't work. I cooked my chicken the day before, so it was cold. If you do this, you will need more than the 20 minutes the recipe states. It took almost 40 at 300 degrees to get it nice and hot. Also, I would suggest cooking your onions slightly before mixing them in if you don't want them crunchy in the casserole. It had good flavor, just needs some tweaking.

Easiest Focaccia Recipe

Not bad for my first try at bread making. I think it could have been better, but i'm pretty sure it was my lack of experience. But the taste was good and the recipe wasn't intimidating like other breads. Maybe I'll try more bread! I've tried this for the 2nd time and it was much better! I added garlic powder, crushed red pepper flakes, and italian seasoning to the dough as well as 3 packages of that cheese you get from Pizza Hut (I was out of the good stuff) and it is Really good!

Peach Cobbler Dump Cake I
