About this Cook
I'm 28 and have a wonderful husband and rambuctious 3 year old daughter. We live in rural Arkansas, where I teach high school social studies. We love to hunt and fish, ride 4-wheelers and all that good country stuff. I love simple foods, with lots of flavors, although I do wish Bobby Flay or Paula Deen could be my personal chefs!
My favorite things to cook
Desserts--mainly because I love to eat them. I also love comfort food-biscuits and gravy, chicken and dumplins. Basically any meals with the word and between them is good!
My favorite family cooking traditions
When I was little and I got sick, my mom would stay home with me and make cookies. That is one of my favorite memories, it made being sick less yuck and more "special days with mom." I can't wait to do that for my daughter. And of course the usual holiday traditions.
My cooking triumphs
Fried chicken. From the first time I made it, it's come out right. Almost as good as my mom's! I make some mean homemade oreos! And my margarita pie. Seriously, I'm never drinking a margarita again. Give it to me in a pie anyday!
My cooking tragedies
My husband asked for fried pies. Not only had I never made a pie crust, but fried pies are the equivalent of rocket science! My crust turned out okay, but I could not get them to seal up and I tried EVERYTHING! So the fillings leaked into the oil, which was OK with the fruit, no major damage. The chocolate was another issue. The oil became a mess and the house smelt like burned chocolate for 2 days.

Margarita Grilled Shrimp
This was really good! I sauteed it on the stovetop though...too hot to fire up the grill today. I made it exactly as the recipe states. I might spice it up a little next time and I definately want to try it on the grill! A great summer, light meal!

Cheesecake Brownies
Sinful! I made these in a 9 inch springform pan, and they turned out beautifully! I also followed the tips on the filling that wifey suggested. Instead of just layering the cheesecake mixture on top, I saved a portion of the brownie to swirl through on top as well. Pretty enough for company, but comforting and easy enough to whip up for the family!

Zesty Slow Cooker Chicken Barbecue
I cut this recipe down, used 2 LARGE chicken breasts. I was afraid of it being watery, so I cut the liquid down to what I thought it could safely cook in. Cooked on high for 3-4 hours, then shredded and returned it to the crock. I let it cook awhile longer and then added more sauce as needed. I will make this again! Like others said...use a good sauce, it makes all the difference.
