Roasted Brussels Sprouts

These turned out great! Roasting veggies just gives them a fantastic flavor. I didn't have kosher salt on hand so I used the same measurements in sea salt & it turned out just fine. However, I should have followed the other reviewer's suggestions and blanched them in boiling water for a couple minutes as the brussels sprouts are a tad bitter. Great recipe to make ahead and just reheat in the oven for a party! I cannot believe my family actually ate them!!!

Awesome and Easy Creamy Corn Casserole

This corn casserole was great! I didn't make any changes to the recipe. I doubled it and baked it for 1 hour. Great to make in advance for a party as you just need to reheat it. Family loved it!

Tater Tot Casserole II

This recipe sounds weird, almost gross, but it was delicious! I made a few adjustments as I combined the recipe w/another found. In a round glass pie dish, I mixed 1 lb ground turkey with salt, pepper, grated onion, dash of onion soup mix. Topped that with frozen corn, 1/2 can mushroom soup,shredded cheddar and then the tater tots. I never grew up on casseroles, neither has my husband and we can't believe how good it was!

Margaritas

This recipe is a must have!!! Instead of using the frozen limeade, I have made them with frozen mexican fruit juices located at the corner mexican market. Parcha/passion fruit is absolutely amazing! Everyone loves them! Also try using Jose Cuervo Citrico..it's a cheap tequila but with the passion fruit, you can't even taste a trace of it.

Mango Lassi II

YUM! This was just as good as the ones I get in the Indian part of town in Chicago! I did make some changes. I used 1 1/2 cups of Whole Foods frozen mango and 1/2 14oz can of Whole Foods canned mango. This was much easier than waiting for mangoes to ripen and cutting them. I did not use any ice. Also, I added the 2 cups of plain low fat yogurt and 1/3c of white sugar. I can't believe how good this was!!!

Chicken and Dumplings III

I accidentally bought two cans of cream of chicken soup and it was still great! I added 1/3c each of onion, celery, carrot and sauteed it; then I added 3 cups of canned chicken broth; the two cans of chicken soup and then I added the shredded chicken breast from a store bought rotis. chicken. I brought ingredients to a boil, put in on simmer and added the biscuits/dumplings on top. Voila!

Apple Pecan Cornbread Dressing

This was very good and not too sweet like others had mentioned. There is a nice balance between the cornbread and regular stuffing mix. Other fruit I added were cranberries and dried apricots. I cooked mine for almost an hour which made it a little dry...I won't overcook it next time.

Vegetarian Link Gravy

Absolutely delish! I used 6 mornning star farm patties instead of links and it turned out great! I also used grands biscuits to serve the gravy with and topped with chopped parsley. I did add a little more flour to thicken.

Stephan's Broiled Salmon Pesto

I thought this recipe was going to be great and it was just okay. There was a nice crust from the pesto. However, I used a jarred pesto and I noticed all of the olive oil that was used in the pesto separated causing much splattering in the broiler. My fiance says for lack of a better recipe we may try it again for the salmon.

Cheesy Ramen Noodles

I was kind of surprised this was pretty good...don't know why I never thought of it earlier. However, I thought the noodles stuck together a little too much. So, I added a tablespoon or sour cream, a tad of butter and it was perfect! I can't believe this was so good!

Florentine Artichoke Dip

This was quick and easy to throw together! Everyone loved it! Served it with tortilla chips. The only substitution I made was for the lemon juice. I didn't have that on hand so I added about a teaspoon of Lemon Pepper Mrs. Dash to the cream cheese. Gave it a great subtle zing!

Baked Apple-Pecan Maple Pancakes

It cooked just fine though I think it needed more sweetness. Next time I may add some brown sugar to the apples. I used bisquick along with soy milk which I think gives any pancake a nice flavor.

Round Steak Sauerbraten

This dish was full of flavor and fork tender! I made it in the crock pot on high for about 4-5hrs. I used 1 c water and 1 c red wine, a garlic flavored brown gravy packet, and a few slices of fresh onion. Delish!

Strawberry Spinach Salad I

1ST TIME A SALAD FOR A FAMILY GATHERING WAS ENTIRELY GONE! I took some tips from other reviews and combined them: I used apple cider and red wine vinegar, a light olive oil, omitted the onion you were suppose to put in the dressing though I added sliced red onion atop the salad along with gorgonzola cheese. It was a huge hit!

Barbeque Pork Two Ways

Great recipe, but the sauce was kind of thin. Next time, I may add some corn starch to thicken at the end. I thew in a teaspoon of cumin and apple cider vinegar served on onion kaiser rolls. Big hit for the game!

Mandarin Orange Cake I

Favorite Hamburger Bites

I just made these for NYE, but vegetarian style for my friends. I substituted a package of boca crumbles for the ground beef, added only 1/2 c light mayo, 1 c cheese, and the onion soup mix. I omitted the extra sauteed onion. They are delish! They taste as close as a vegetarian will get to White Castles up here in the North! Even meat eaters picked these up and didn't realize it wasn't ground beef until I broke it to them!
